New research from Cornell AgriTech, in collaboration with Université Bourgogne Europe in Dijon, France, indicates that consumer bias against the color of wines made from hybrid grape varieties may be overstated. The study, published in the American Journal
of Enology and Viticulture, found that while initial visual appeal influenced expectations, it was a weak predictor of actual enjoyment after tasting. Researchers recruited 82 regular red wine drinkers to evaluate eight commercial red wines, including five hybrid cultivars and three traditional Pinot Noirs. Panelists rated appearance, expected enjoyment based on color, and actual enjoyment after tasting. The findings revealed that wines with lighter or more yellow/brown tones scored lower visually, but this visual preference did not significantly correlate with overall liking once the wines were tasted. This challenges long-held industry assumptions that darker wines are inherently perceived as higher quality, which has historically hindered the adoption of hybrid grapes.
