The food and beverage industry is increasingly adopting upcycling practices, driven by its recognition as a cost-saving measure and a means to add value amidst volatile supply chains. Zareena Valappil, PhD, vice president of global citrus at Kerry, highlights
that upcycling is no longer solely for sustainability but has become an innovation space. Kerry, for instance, is applying upcycling in the citrus segment, which has seen significant production declines due to plant diseases and hurricanes. The company is identifying byproducts and molecules from citrus waste, such as pulp and peel, to create natural citrus solutions. These include fiber texturing agents for dairy alternatives and sauces, and extracted taste molecules for flavor profiles. This strategic shift aims to improve resource utilization and stabilize the availability of critical ingredients.

Kerry has developed citrus extenders, a flavor solution that replaces citrus oils using upcycled materials and biotechnology, and the JuiceXcel system, an upcycled concentrated juice solution that replicates citrus juice concentrates with reduced carbon emissions, water usage, sugar, and caloric content. While upcycling is a powerful tool for resource utilization, Valappil notes it cannot entirely offset challenges like supply shortages or quality impacts in vulnerable crops. The industry is expected to continue exploring upcycling in other vulnerable supply chains, such as cocoa. This will likely involve further research and development into new technologies and processes to extract value from various food byproducts. Collaboration between food manufacturers, technology providers, and agricultural sectors will be crucial for expanding the scope and impact of upcycling initiatives.
