MashMore Potato, a comfort-food establishment based in Albany, New York, has introduced an innovative AI-native operating system called MashMore AIOS. This system is designed to manage the entire restaurant operation, from HR and finance to inventory
and kitchen management. The AIOS is agentic, meaning it not only provides recommendations but also executes tasks such as drafting staff schedules and reordering inventory. Currently, three of its six pillars—finance, HR, and inventory—are operational at the Albany flagship, with plans to expand to kitchen management, marketing, and point-of-sale in the next quarter. The system has already reduced managerial workload by up to 80%, allowing for more efficient operations and easier scalability.
