The Science: From Nitrate to Nitric Oxide
When you drink beetroot juice, the nitrates are converted into nitrites by bacteria on your tongue. This is why using mouthwash shortly before or after consumption is discouraged, as it can disrupt this crucial first step. The nitrites then travel through your bloodstream and, in areas of low oxygen (like your hard-working muscles during a run), are converted into nitric oxide (NO).
