The journey from farm to table starts with a seed in the soil, but it's immediately fraught with risk. In India, agriculture is heavily dependent on predictable weather patterns, especially the monsoon. Extreme weather events like heatwaves, unseasonal
rains, floods, and droughts can devastate standing crops. For instance, research shows that changes in rainfall and temperature can directly increase vegetable inflation by over one percentage point each. Staples like tomatoes, onions, and potatoes (TOP) are particularly vulnerable. Heavy rains in key growing states like Himachal Pradesh or hailstorms in Maharashtra have previously led to significant drops in production, causing immediate price spikes in wholesale markets. Beyond weather, pests and diseases also pose a constant threat, capable of wiping out a farmer's hard work and investment overnight, creating the first link in the chain of price inflation.
The Cost of Inputs
Farming isn't just about sun and soil; it requires significant financial investment. The cost of essential inputs like fertilizers, pesticides, diesel for tractors, and electricity for irrigation has been rising. India's reliance on imported fertilizers makes farmers vulnerable to global events. For example, geopolitical conflicts, such as those in West Asia, can disrupt shipping routes and drive up the prices of raw materials like ammonia and sulphur, key components of fertilizers. Industry associations have warned that such disruptions can increase the cost of agrochemicals by 20-25%. These higher operational costs squeeze farmers' profits and eventually get passed down the supply chain, contributing to the final price tag on produce.
The Long Road to Market
Once a crop is harvested, it begins a long and often inefficient journey to your kitchen. The first stop is typically a local mandi, or wholesale market. Here, prices are determined by supply and demand, but also by the powerful influence of middlemen or traders. Farmers, particularly small and marginal ones, often lack the means to store their produce or transport it to larger markets, forcing them into distress sales at low prices. From the mandi, the produce is sold to other wholesalers, distributors, and finally, retailers. Each intermediary in this chain adds their own margin, incrementally increasing the cost. This multi-layered system means that by the time vegetables reach your neighbourhood vendor, the price has been marked up several times.
Wastage and Infrastructure Gaps
A significant portion of the final price is influenced by something that never even reaches the consumer: wastage. India's lack of adequate post-harvest infrastructure, especially cold storage facilities and refrigerated transport, is a major problem. Perishable goods like fruits and vegetables are particularly susceptible to spoilage during transit and storage, especially in extreme heat or humidity. When a portion of the supply is lost to spoilage, the effective supply shrinks, driving up the price of the remaining produce to cover the losses. Traders in major markets like Delhi's Azadpur Mandi have reported high levels of spoilage when weather events damage crops or disrupt transport, leading to lower quality produce and volatile prices. This inefficiency in the supply chain means consumers are essentially paying for the food that gets wasted along the way.
The Final Price You Pay
By the time produce arrives at the retail level, its price reflects the accumulation of all these factors: the initial crop risk, the cost of farming inputs, the margins of multiple middlemen, transportation costs inflated by fuel prices, and losses from wastage. So, when unseasonal rain damages the onion crop in Karnataka, or a heatwave affects tomato yields, the ripple effect is felt across the country. Government policies like the Minimum Support Price (MSP) aim to provide a safety net for farmers for certain crops, but their effectiveness can vary, and they don't cover all produce, especially perishables like most vegetables. Ultimately, the price volatility of kitchen staples is a clear indicator of the systemic stresses affecting India's entire food supply chain, from the farm to your grocery bill.
