Dragon fruit, also known as pitaya, is a tropical fruit that grows on a cactus. Despite its wild appearance, its flavour is surprisingly mild and often described as a cross between a pear and a kiwi. There are three main types you're likely to encounter.
The most common has bright pink skin with white flesh speckled with tiny black seeds. Another variety features the same pink skin but with a stunning, deep red or magenta flesh, which tends to have a richer, sweeter flavour. The third, a yellow-skinned variety, is generally the sweetest of all. The tiny black seeds are edible, similar to those in a kiwi, and add a light crunch.

Choosing a ripe dragon fruit is simple. Look for one with bright, evenly coloured skin. It should give just slightly when you press on it, similar to a ripe avocado or kiwi. If it’s rock-hard, you can let it ripen on the counter for a few days. Prepping it is even easier. Start by washing the fruit, then place it on a cutting board and slice it in half lengthwise. From here, you can use a large spoon to scoop the flesh out in one piece. Alternatively, you can cut the halves into quarters and simply peel the thick skin away from the flesh. The skin is not edible but can be used as a natural, decorative bowl for serving.
