It’s called the 'crookie', and the name says it all. This indulgent creation is part croissant, part cookie. Imagine a perfect French croissant, sliced in half like a sandwich. The inside is generously filled with raw chocolate chip cookie dough. But

More cookie dough is often smeared on top, and the entire thing is baked again until the pastry is warm and crisp, and the cookie dough is perfectly baked—molten and gooey on the inside, slightly crisp on the edges. A Parisian Origin Story
Like many great food trends, the crookie has a charming backstory. While bakers have likely experimented with this combination before, the recent viral explosion can be traced to one specific spot: Maison Louvard, a bakery in Paris. In 2022, baker Stéphane Louvard reportedly came up with the idea to use up his bakery's excellent croissants and cookie dough in a new way. He started selling them, and while they were a local hit, it wasn't until early 2024 that the crookie went supernova. A TikTok influencer posted a video of the treat, and the internet did the rest. Soon, queues formed outside Maison Louvard, and the crookie became a global phenomenon, with bakeries from London to New York to Mumbai racing to create their own versions.
The Psychology of the Mashup
Why are we so obsessed with dessert hybrids? The crookie is just the latest in a proud lineage that includes the 'cronut' (croissant-doughnut) and the 'brookie' (brownie-cookie). These mashups tap into a powerful consumer desire for novelty combined with comforting familiarity. They offer the best of both worlds. You get the sophisticated, flaky butteriness of a classic European pastry and the nostalgic, child-like joy of a warm chocolate chip cookie. It’s an easy-to-understand concept that delivers a complex, satisfying experience. The visual appeal is also undeniable; a crookie sliced open, with its melted chocolate and layered pastry, is practically designed for Instagram and TikTok, fuelling a cycle of desire and discovery.

The At-Home Crookie Hack
While bakeries across India are starting to offer their own versions, you don't have to wait to find one near you. The beauty of the crookie is its simplicity, making it incredibly easy to replicate at home. All you need are some good-quality, plain croissants (day-old ones work great) and a roll of your favourite pre-made chocolate chip cookie dough. Simply slice the croissant horizontally, stuff it with a generous amount of dough, and maybe add a little more on top for good measure. Pop it in an oven preheated to around 180°C for 10-12 minutes, or until the croissant is golden brown and the cookie dough is baked through. Let it cool for a minute before diving in—if you can wait that long.
