The Unseen Enemy in Food Production
When you think of food safety, you might picture clean kitchens and expiry dates. But what about the giant mixers, conveyors, and cutting tools in a processing plant? According to the Food Safety and Standards Authority of India (FSSAI), the very equipment
that prepares our food can pose a hidden threat if not properly maintained. In a recent advisory, the regulator highlighted a growing concern: the use of rusted, chipped, or corroded equipment in food businesses. This isn't just a cosmetic issue; it's a direct threat to public health. Corrosion, commonly known as rust, happens when metals are exposed to moisture and oxygen, a constant reality in food facilities. This breakdown of the metal surface can introduce a host of contaminants into the food chain.
From Rust to Real Health Risks
Corroded equipment can contaminate food in three dangerous ways: physical, chemical, and microbiological. Physically, tiny flakes of rust or chipped paint can break off and mix into the food. Chemically, corrosion can cause heavy metals from the machinery—like nickel, lead, or chromium—to 'leach' into the food product. This is especially risky with acidic or salty foods, which can accelerate the corrosion process. Microbiologically, the pitted and uneven surfaces of rusted equipment are perfect hiding spots for harmful bacteria. These surfaces are difficult to clean and sanitise properly, allowing bacteria to grow and form biofilms, which can lead to widespread foodborne illnesses.
FSSAI's New Blueprint for Safety
To combat these risks, FSSAI has issued clear directives for all Food Business Operators (FBOs). Citing Schedule 4 of the existing Food Safety and Standards Regulations, the authority has mandated that all equipment, utensils, and surfaces that come into contact with food must be made of food-grade, non-toxic, and corrosion-resistant materials. The guidance specifically directs businesses to immediately remove and replace any equipment that shows signs of rust, corrosion, chipping, or paint damage. Furthermore, it reinforces the need for regular and thorough cleaning, sanitisation, and sterilisation procedures to keep these surfaces hygienic. This directive essentially moves food safety from just testing the final product to ensuring the entire production line is built for safety from the ground up.
What 'Food-Grade' Really Means
The term 'food-grade' isn't just a marketing buzzword; it's a technical standard. Materials like food-grade stainless steel (such as types 304 and 316) are specifically designed for use in the food industry. They contain higher amounts of elements like chromium and nickel, which form a protective, passive layer on the surface. This layer resists corrosion from acids, salts, and harsh cleaning chemicals, preventing metal from leaching into food. A 'food-grade' material is non-reactive, meaning it won't alter the taste or appearance of the food it touches, and is non-porous, making it easy to clean and resistant to bacterial buildup. FSSAI’s focus ensures that operators don't just use any metal, but the right metal for the job.

For consumers, this guidance offers an added layer of assurance. While you may never see the machinery your food is processed on, these regulations work behind the scenes to protect your health. By cracking down on a fundamental source of potential contamination, FSSAI is strengthening the integrity of the entire food supply chain. It aligns India's domestic standards more closely with global best practices, which is crucial for both domestic consumption and international trade.
