In a large bowl, whisk together the hung curd, ginger-garlic paste, tandoori masala, kasuri methi, chilli powder, salt, lemon juice, and oil to create a smooth marinade.2. Gently add the paneer cubes, capsicum, and onion petals to the marinade. Ensure every piece is evenly coated. Let it marinate for at least 30 minutes, or overnight in the refrigerator for a deeper flavour.3. Preheat your air fryer to 200°C for about 5 minutes.4. You can make the chutneys ahead of time and assemble the bhel just before serving to keep it from getting soggy.Ingredients:- 2 cups puffed rice (murmura)- 1 medium onion, finely chopped- 1 medium tomato, finely chopped- 1 small boiled potato, diced- 1/4 cup boiled moong sprouts or black chickpeas (optional)- 2 tablespoons roasted peanuts- 2 tablespoons finely chopped coriander leaves- For Garnish: A small amount of sev (nylon sev is best)For the Chutneys:- Green Chutney: Blend 1 cup mint leaves, ½ cup coriander leaves, 1-2 green chillies, a small piece of ginger, and lemon juice with a little water until smooth.- Tamarind-Date Chutney: Boil a small piece of seedless tamarind and a few pitted dates with jaggery and water until soft. Blend and strain to get a smooth, sweet and tangy chutney.Method:1. In a large bowl, combine the puffed rice, chopped onion, tomato, boiled potato, and sprouts.2. Add the roasted peanuts and fresh coriander leaves.3. Just before serving, drizzle a small amount of the green chutney and tamarind-date chutney. Start with a little and add more to taste.4.
