Most of what we perceive as flavour is actually smell. Our tongues can only detect five basic tastes—sweet, salty, sour, bitter, and umami—but our noses can identify thousands of different aromas. This sensory information comes from volatile compounds,
which are tiny molecules that evaporate from food and travel into our nasal cavity. This happens in two ways: directly through the nostrils when you sniff your food (orthonasal olfaction), and through the back of your throat as you chew (retronasal olfaction). Retronasal olfaction is responsible for the majority of flavour perception while eating. Think about the rich scent of brewing coffee, the fruity notes in a glass of wine, or the complex spices in a biryani. Without their distinct aromas, these experiences would be significantly duller. To practice, the next time you have a cup of chai, close your eyes and inhale deeply before your first sip. Try to pick out individual scents like cardamom, ginger, or cinnamon. Understanding Texture and Fibre
Texture, often described by the term 'mouthfeel', is about how food feels in your mouth. It is a critical part of the eating experience, sometimes even more important than taste for judging quality and freshness. Think about the satisfying crunch of a fresh papad or the creaminess of a dal makhani. These sensations are determined by the food's physical properties. When we talk about fibre in this context, we are referring to the food's structure. Is it chewy, crisp, soft, or smooth? A food's textural characteristics are evaluated subconsciously from the first bite to how it breaks down while chewing and the residual feeling after you swallow. The texture can dramatically alter how we perceive flavour. The same potato becomes a completely different experience when it is a smooth, creamy mash versus a crispy, fried chip. Paying attention to texture adds another layer of appreciation. Notice the difference between a tender piece of paneer and a chewy naan, or the way a ripe mango feels compared to a crunchy apple.
The Brightness of Acidity
Acidity is the culinary equivalent of a bright light, making everything feel more vibrant and alive. It’s the sour tang you get from lemons, yogurt, tomatoes, or vinegar. In tasting, acidity provides balance, cutting through richness and preventing flavours from feeling heavy or monotonous. A squeeze of lime over a rich curry, for example, lifts the entire dish. Acidity makes your mouth water, which cleanses the palate and prepares you for the next bite. It works in harmony with other tastes, enhancing saltiness and balancing sweetness. A wine with good acidity feels crisp and refreshing, while one without it can taste flat. To train your palate to recognise acidity, pay attention to that sharp, tangy sensation in your food and drinks. Notice how the tartness in a raita complements the spices in a main dish, or how the sourness of tamarind in a sambar brings all the other flavours into focus. This element is key to a well-rounded flavour profile.

The best way to get better at tasting is to practice mindful eating. The next time you sit down for a meal, slow down and engage all your senses. Pick one item on your plate. First, smell it. What aromas do you recognise? Are they sweet, earthy, spicy, or floral? Next, take a bite and focus on the texture. Is it soft, crunchy, creamy, or chewy? Finally, pay attention to the tastes. Can you detect the brightness of acidity alongside the sweetness, saltiness, or bitterness? You don’t need a special occasion or fancy food to do this. Try it with your morning cup of tea, a simple apple, or a bowl of dahi. The goal is not to become a professional food critic overnight, but to build a vocabulary and a deeper awareness of what you are consuming.
