This concept, similar to 'terroir' in wine, suggests that the soil, climate, and native plants of a region impart a unique flavour that cannot be replicated elsewhere. This trend isn't just about finding new ingredients; it's about rediscovering old ones and understanding that the sourness from a fruit grown on the Konkan coast is fundamentally different from one found in the hills of Coorg.
The Konkan Coast's Fruity Tang: Kokum
Travel along India's western coast, and you'll encounter kokum. A fruit from the mangosteen family, its deep red, dried rind provides a flavour that is both sour and slightly sweet, without the aggressive pucker of tamarind. In Maharashtra and Goa, kokum is the soul of many dishes, from fish curries to lentils. It lends a beautiful rosy hue and a gentle, fruity acidity that is distinctive to the region. A classic example is solkadhi, a refreshing pink-hued beverage made from coconut milk and kokum, known for its digestive properties. The use of kokum is a clear marker of Konkani cuisine, instantly transporting the diner to the coastal landscapes where the Garcinia indica tree thrives. This dark, viscous vinegar is made from the juice of the Garcinia gummi-gutta fruit, a relative of kokum. The fruit is harvested during the monsoon, and its juice is slow-boiled to create a concentrated, almost black liquid with a potent, smoky sourness. Kachampuli is the defining flavour of Kodava cuisine, most famously used in the iconic pandi (pork) curry. Its intense, complex tang is entirely different from any other souring agent, acting as both a flavour enhancer and a preservative. A bottle of Kachampuli in a Coorg home is a testament to culinary identity, a flavour passed down through generations that speaks directly of its origin.
From North to East: A Spectrum of Sours

In the East, particularly Assam, the elephant apple (ou tenga) and other local Garcinia species like thekera tenga add a distinct sourness to fish curries and dals, flavours that are rarely found outside the region.
