The Classic 10-Minute Paneer Bhurji
Paneer bhurji is a breakfast champion for a reason: it's incredibly fast, packed with protein, and delicious. This scrambled cottage cheese dish can be ready in the time it takes to make your morning chai. Paneer is a great source of casein protein, which
digests slowly and helps keep you feeling full for hours. To start, heat a teaspoon of ghee or oil in a pan. Add cumin seeds, followed by finely chopped onions, and sauté for a minute until translucent. Stir in chopped tomatoes, ginger-garlic paste, and spices like turmeric and red chilli powder. Cook for two to three minutes until the tomatoes soften. Finally, add crumbled paneer (about 120-150 grams per person for a protein-rich serving), mix well, and cook for another two minutes until heated through. Garnish with fresh coriander and serve hot with whole-wheat toast for a complete meal that provides a fantastic protein boost.
Quick Oats and Besan Chilla
Chillas, or savoury Indian pancakes, are a versatile and quick breakfast option. An oats chilla combines the fibre of oats with the protein from besan (gram flour) for a powerful start to your day. Simply grind about half a cup of quick-cooking oats into a powder. In a bowl, mix the oat flour with an equal amount of besan, finely chopped vegetables like onions and carrots, and spices such as turmeric, cumin, and salt. Add water gradually to form a smooth, pourable batter, similar to a dosa batter. Let it rest for just a few minutes if you have time. Heat a non-stick tawa, pour a ladleful of the batter, and spread it into a circle. Cook for a minute or two on each side until golden brown. For an even higher protein version, you can add crumbled paneer or grated tofu to the batter.
Speedy Tofu Scramble (Bhurji)
For a vegan alternative to paneer, a tofu scramble offers a similar texture and an equally impressive protein profile. It’s also just as quick to prepare. Start by crumbling a block of extra-firm tofu. Heat a little oil in a pan and sauté some chopped onions or scallions for a minute. Add the crumbled tofu to the pan along with spices. Turmeric will give it a nice yellow colour, and a pinch of black salt (kala namak) can impart a surprisingly 'eggy' flavour. You can also add other spices like garlic powder and paprika. Stir everything together and cook for about 3-5 minutes until the tofu is heated through. For extra flavour and nutrients, toss in some spinach or chopped bell peppers in the last minute of cooking. Serve it just like you would paneer bhurji.
No-Cook Sprouted Moong Salad
When you are truly short on time, a no-cook breakfast is your best friend. A sprouted moong salad is refreshing, crunchy, and requires zero cooking if you use ready-made sprouts. Sprouted moong beans are a nutritional powerhouse, rich in protein and fibre. In a large bowl, simply combine about two cups of sprouted moong with finely chopped vegetables like cucumber, tomatoes, and onions. For flavour, add a generous squeeze of lime juice, chaat masala, a pinch of salt, and some roasted cumin powder. Toss everything together and garnish with fresh coriander. For extra crunch and healthy fats, you can add a handful of roasted peanuts. This salad is not only ready in under 10 minutes but is also light, hydrating, and incredibly nutritious.
