Looking for a delicious twist on the classic dosa? This Rajgira Paneer Dosa is a wholesome, gluten-free, and protein-packed meal that's perfect for any day of the week, and especially popular during fasting periods like Navratri.
A Nutritious Powerhouse
Before we start cooking,
let's appreciate the star ingredients. Rajgira, also known as amaranth, is not technically a grain but a pseudo-cereal, which makes it a popular choice for fasting. It is naturally gluten-free and packed with protein, fibre, and essential minerals like calcium, iron, and magnesium. This makes it incredibly nutritious, helping to build bone strength, aid digestion, and provide sustained energy. Paneer, or Indian cottage cheese, is a beloved source of high-quality protein and calcium, complementing the rajgira perfectly to create a balanced and satisfying dish. Together, they form a combination that is not just tasty but also wonderfully healthy.
Ingredients for Your Dosa
For the Dosa Batter:
- 1 cup Rajgira (Amaranth) flour
- 1/4 cup other fasting flours like Sabudana or Singhada atta (optional, for crispiness)
- Sendha namak (rock salt) to taste
- 1/2 tsp Cumin powder (optional)
- Water, as needed to create a smooth, thin batter
- Ghee or oil for cooking
For the Paneer Filling:
- 1 cup crumbled paneer
- 1 tbsp oil or ghee
- 1/2 tsp cumin seeds
- 1 small onion, finely chopped (can be omitted for fasting)
- 1 small tomato, finely chopped (optional)
- 1 green chilli, finely chopped
- 1/4 tsp turmeric powder (haldi)
- 1/2 tsp red chilli powder
- Sendha namak (rock salt) to taste
- Fresh coriander leaves, chopped
Step 1: Prepare the Dosa Batter
Creating the perfect rajgira dosa batter is simple and quick. In a mixing bowl, combine the rajgira flour and any optional flours you're using. Add the sendha namak and cumin powder, if desired. Gradually pour in water while whisking continuously to form a smooth, lump-free batter. The consistency should be thin and pourable, similar to that of a traditional dosa batter or buttermilk. Let the batter rest for about 20-30 minutes. This allows the flour to hydrate properly, which results in better dosas.
Step 2: Make the Savoury Paneer Filling
While the batter rests, prepare the flavourful paneer filling. Heat oil or ghee in a pan over medium heat. Add the cumin seeds and let them splutter. If you are not fasting, add the chopped onions and sauté until they turn translucent. Next, add the green chillies and chopped tomatoes, cooking until the tomatoes soften. Add the turmeric powder, red chilli powder, and salt, and mix well. Finally, add the crumbled paneer and chopped coriander leaves. Stir everything together and cook for just a minute or two. Be careful not to overcook the paneer, as it can become rubbery. Once done, set the filling aside.
Step 3: Cook the Dosas to Perfection
Now it's time to assemble your delicious dosas. Heat a nonstick tawa or a well seasoned cast iron skillet over medium high heat. Lightly grease it with ghee or oil. Once the tawa is hot, stir your batter well and pour a ladleful onto the center, spreading it in a circular motion to form a thin dosa. Drizzle a little ghee or oil around the edges and on top. Cook for a couple of minutes until the bottom turns golden brown and the edges begin to lift and look crisp. Unlike some dosas, you don't need to flip this one. Place a generous amount of the paneer filling on one half of the dosa. Fold the other half over and press down gently. Your Rajgira Paneer Dosa is now ready to be served hot.
Tips for Crispy, Flavourful Dosas
To ensure your dosas turn out perfectly every time, keep these tips in mind. First, the batter consistency is key; it must be thin and flowing. If it's too thick, the dosa will be soft rather than crisp. Second, make sure your tawa is sufficiently hot before pouring the batter. This prevents sticking and helps create a crispy texture. For fasting, you can enhance the filling with ingredients like grated boiled potatoes or roasted peanut powder. If you're not fasting, adding a bit of finely chopped ginger, garlic, or capsicum to the paneer bhurji can add another layer of flavour.
