The single biggest reason for this inconsistency is that different flours absorb water at different rates. The science is straightforward: a flour's properties, namely its protein (gluten) content, fibre content, and the fineness of the milling process,
dictate how 'thirsty' it is. Flours with higher protein and fibre absorb more water. For instance, the bran and germ in whole wheat flour contain compounds that can soak up a significant amount of liquid. This is why whole wheat atta generally requires more water than refined maida to achieve the same dough consistency.

Even within the world of 'atta' or whole wheat flour, there can be surprising variations. Freshly milled chakki atta, which is stone-ground, tends to be coarser and retains more of the bran. This makes it more absorbent than some commercially packaged atta brands that might be milled more finely. The protein level in wheat can also differ based on the grain variety, which in turn affects gluten formation and water absorption. A high-protein atta will naturally create a stronger gluten network and demand more hydration to become pliable. This explains why switching from one brand of atta to another can unexpectedly change your tried-and-tested water-to-flour ratio.
Navigating Multigrain and Millet Flours
The growing popularity of multigrain and millet flours introduces even more variables. Multigrain attas are blends of wheat with other grains like jowar (sorghum), bajra (pearl millet), ragi (finger millet), soya, or oats. Many of these grains, especially millets and oats, are high in fibre and absorb a lot of water. Rotis made with a high proportion of non-wheat flours often feel denser. Millet flours like jowar, bajra, and ragi are gluten-free. Without gluten's elastic structure, the dough behaves very differently. These flours often require hot water to help bind them and typically need a higher water-to-flour ratio, sometimes close to 1:1, to form a workable dough. A common mistake is using the same amount of water as you would for wheat atta, resulting in a dry, unrollable dough.

Instead of strictly following a recipe's measurements, learn to trust the feel of the dough. Here are some practical tips to adapt to any flour: 1. Add Water Gradually: Never dump all the water in at once. Start by adding about half the estimated amount and mix. Continue adding small amounts of lukewarm or hot water until the dough just comes together. This gives you control and prevents a sticky mess. 2. Knead Thoroughly: Proper kneading develops the gluten in wheat flours and helps evenly hydrate all flours. A well-kneaded dough will be smooth, pliable, and non-sticky. 3. Rest the Dough: This is a crucial step. Letting the dough rest for at least 15-30 minutes, covered, allows the flour to fully absorb the water. This makes the dough softer, more elastic, and easier to roll. For high-fibre and millet flours, this resting period is especially important. 4. Mind the Environment: Humidity and temperature can also affect your dough. On a dry day, your flour may be drier and require slightly more water. On a humid day, you might need less. Adjust accordingly.
