Mastering the Basics for Perfect Crunch
Before you begin, a few universal tips will ensure your air-fried snacks are a success. First, always preheat your air fryer for a few minutes; this helps in cooking the food evenly. Second, resist the temptation to overcrowd the basket. Food needs space
for the hot air to circulate and create that desired crispy texture; cook in batches if necessary. For snacks that are traditionally deep-fried, a light brush or spray of oil is crucial. This not only prevents them from drying out but also gives them a golden-brown finish. Finally, remember to shake the basket or flip the snacks halfway through the cooking time to ensure they brown evenly on all sides.
1. The Classic Samosa, Reimagined
The quintessential Indian snack, samosas, can be beautifully adapted for the air fryer. Whether you're using frozen samosas or making them from scratch, the process is simple. Lightly brush each samosa with oil and place them in a single layer in the preheated air fryer basket. Air fry at around 180°C (350°F) for 12 to 15 minutes, flipping them halfway through. They will emerge with a golden, flaky crust and the familiar spicy potato and pea filling inside. While the texture might be slightly less blistered than the deep-fried version, the satisfying crunch and flavour remain, making it a worthy, healthier alternative.
2. Healthier Hara Bhara Kabab
These vibrant green patties, packed with spinach, peas, and potatoes, are a fantastic candidate for the air fryer. The key is to ensure your kabab mixture is not too wet; if it feels sticky, add a bit more breadcrumbs or roasted gram flour (besan) to bind it. Shape the mixture into patties and refrigerate them for about 10 minutes to help them firm up. Preheat the air fryer, brush the patties with oil, and place them in the basket, using parchment paper to prevent sticking if needed. Air fry at around 190-200°C (390°F) for 10 to 12 minutes, flipping them once midway through the cooking process. The result is a kabab that's delightfully crisp on the outside and soft on the inside.
3. Flaky & Light Kachori
Making khasta kachori in an air fryer is entirely possible, delivering that beloved flaky texture with significantly less oil. After preparing your dough and the spiced filling (like moong dal or onion), shape the kachoris. It is important to preheat the air fryer to about 185°C (365°F). Brush the kachoris generously with oil or ghee before placing them in the basket and flip them every 5 minutes, brushing with more oil each time. This prevents them from drying out and helps achieve a beautiful golden colour. They typically take about 15-20 minutes to cook, leaving you with a wonderfully crisp and flavourful snack.
4. The Challenge of Medu Vada
Medu vada, with its wet lentil batter, is trickier but not impossible. A runny batter will drip through the basket, so the consistency must be thick. Grinding the soaked urad dal with very little cold water is essential. Some recipes suggest adding a teaspoon of oil to the batter itself. To prevent sticking and maintain shape, it's best to use silicone cupcake moulds or small ramekins placed inside the air fryer basket. Spoon the batter into the greased moulds and air fry at around 180°C (360°F) for about 15-20 minutes, flipping them once. While they won't have the exact same airy texture as their deep-fried counterparts, they offer a surprisingly satisfying and much healthier way to enjoy this South Indian favourite.
