During the Indian monsoon, the markets are flush with a specific bounty of vegetables that thrive in the humid, rainy conditions, offering a perfect opportunity to refresh your tiffin menu.
Monsoon Hero: Bottle Gourd (Lauki)
Often overlooked, bottle gourd, or lauki, is a versatile and incredibly healthy monsoon vegetable. It’s light on the stomach, hydrating, and easy to digest, making it an ideal choice for a midday meal that won't leave you feeling sluggish. For a simple office lunch, a classic lauki sabzi, cooked with minimal spices, is perfect. It pairs well with rotis and can be made the night before. Another great option is to prepare lauki theplas; these flatbreads are nutritious, travel well, and remain soft for hours, making them an excellent tiffin choice. Go Green with Spinach (Palak)

It’s easy to eat at your desk and tastes great even at room temperature. To ensure it doesn’t become slimy, pat the bhindi completely dry before chopping and cook it in an open pan. For a twist, you can stuff them with a spice mix before pan-frying.
Versatile Gourds and More
The monsoon basket is full of other delicious options like ridge gourd (turai) and bitter gourd (karela). Turai can be cooked into a simple, watery curry that is light and complements rice perfectly. While an acquired taste for some, karela is prized for its health benefits and can be made into a delicious stuffed curry or crispy fries that reduce its bitterness. Cucumbers are also at their best, perfect for a refreshing side salad to accompany any meal. A mixed vegetable pulao featuring diced carrots, beans, corn, and any of these seasonal gourds is a fantastic one-pot meal that’s both filling and flavourful.
Tips for the Perfect Tiffin
How you pack your lunch is as important as what you pack. Let freshly cooked sabzis and rice cool down completely before closing the container to prevent them from getting soggy. Use airtight containers to avoid any unfortunate spills. If you’re packing a salad, keep the dressing in a separate small container to pour over just before you eat. Pre-chopping your vegetables the night before can save you precious time during busy mornings, making it easier to stick to your healthy lunch plan.
