The Philosophy of Sattvik Eating
Before diving into the ingredients, it’s helpful to understand the 'why' behind Sattvik food. In yogic and Ayurvedic traditions, foods are classified by their effect on the body and mind into three categories or 'gunas': Sattva (purity, harmony), Rajas
(activity, passion), and Tamas (heaviness, inertia). A Sattvik diet, which is the cornerstone of fasting, focuses on fresh, natural, and easily digestible foods that promote clarity, lightness, and calmness. The goal isn't just to abstain from certain foods but to consume meals that support the body’s energy and the mind's peaceful state, making you feel refreshed rather than depleted.
The Purity of Rock Salt (Sendha Namak)
The first major swap during a fast is replacing common table salt with sendha namak, or rock salt. This isn't just a tradition; it's a conscious choice for purity and health. Unlike commercially processed table salt, rock salt is unprocessed and free from chemical additives. According to Ayurveda, it has a 'cooling' potency, which helps balance the body's heat or Pitta dosha, making it gentle on the system during a fast. Furthermore, sendha namak is rich in essential trace minerals like potassium, magnesium, and calcium. This is crucial during fasting, as these minerals help maintain the body's electrolyte balance, preventing the fatigue and dehydration that can sometimes accompany a restricted diet. It aids digestion, helps improve nutrient absorption, and its lower sodium content compared to table salt helps in managing blood pressure.
The Golden Goodness of Pure Ghee
Ghee, or clarified butter, is another non-negotiable in Sattvik cooking, revered in Ayurveda as a superfood. Far from being just any fat, pure ghee is a source of healthy, easily digestible fatty acids, including short-chain fatty acids like butyric acid. This is important because butyric acid helps nourish gut cells and possesses anti-inflammatory properties. Ghee acts as a lubricant for the digestive tract, aiding in smoother digestion and nutrient absorption. It also provides a sustained source of energy, which is vital when food intake is limited. Ghee is also a carrier for fat-soluble vitamins like A, D, E, and K, which are crucial for everything from immunity to bone health. In Ayurvedic terms, ghee enhances 'Ojas', the body's essential vitality, contributing to strength and immunity without causing heaviness.
The Subtle Power of Sattvik Spices
Fasting doesn't mean food has to be bland. Sattvik meals use specific spices that add flavour while supporting the body. Spices are chosen for their ability to aid digestion, which can become sluggish during a fast. Unlike 'heating' or Rajasic spices like red chilli and garlic, Sattvik spices are gentle. Cumin (jeera), for example, is known for its earthy flavour and its wonderful digestive properties, helping to prevent bloating. Black pepper provides gentle heat and helps stimulate metabolism. Other spices like green cardamom (elaichi) and cinnamon (dalchini) are often used in fasting sweets and drinks. Cardamom is known for its calming effect and its ability to prevent acidity, while cinnamon adds warmth and flavour. These spices work in harmony to make food palatable and digestible, detoxifying the body and keeping energy levels stable.
