The Problem with Plain Iced Tea
Let's be honest: making truly great iced tea at home is harder than it looks. The first challenge is brewing it strong enough. A brew that’s perfect when hot becomes weak and thin once it’s chilled and diluted with ice. Standard ice cubes are the main
culprit, melting into plain water and washing away all that carefully steeped flavour. You can try brewing a super-concentrated batch, but the balance is tricky to get right, often resulting in bitterness from over-steeping. The second problem is the one-dimensional taste. Even a good black or green tea can feel a bit monotonous after a few sips, especially on a sweltering afternoon when your palate craves something more dynamic and refreshing. You’re left with a drink that’s cold, but not necessarily exciting.
Why Frozen Mango Puree is the Answer
This is where the magic happens. Instead of using plain water ice cubes, you use frozen cubes of mango puree. This simple swap solves multiple problems at once. First, it chills your drink without diluting it. As the mango cube melts, it releases concentrated, sweet-tart mango flavour directly into your tea, enhancing the drink rather than watering it down. Second, it adds a beautiful, thick body and a slightly slushy texture that feels incredibly luxurious. Finally, it provides natural sweetness and a tropical tang that perfectly complements the earthy notes of tea. The Perfect Tea Pairings
While this technique works with most teas, some pairings are better than others. Once your tea is cool and your mango cubes are frozen, assembly is the easiest part. Don’t pour hot tea over the frozen puree, as it will melt too quickly and make the drink lukewarm. Always start with cooled tea. Take a tall glass and drop in three or four of your frozen mango puree cubes. Slowly pour the cooled black, green, or herbal tea over the cubes. Watch as the vibrant orange of the mango begins to swirl into the tea. Give it a gentle stir with a long spoon. As the cubes slowly melt, they’ll chill the drink to perfection while infusing it with luscious flavour.
