What Makes Cold-Pressed Different?
For decades, highly processed refined oils dominated the market. These are extracted using high heat and chemical solvents, which strip away nutrients and natural flavour. Cold-pressing, on the other hand, is a mechanical method that extracts oil from
seeds without heat. This gentle process ensures the final product retains its natural goodness—antioxidants, vitamins, and minerals—along with a rich, nutty aroma that refined oils lack. This shift isn't just a trend; it's a conscious choice to embrace a more wholesome and flavourful way of cooking, rooted in millennia of Indian culinary history.
A Nutritional Powerhouse
The health benefits are a primary driver behind this resurgence. Cold-pressed sesame oil is rich in heart-healthy fats, specifically monounsaturated and polyunsaturated fats, which can help manage cholesterol levels. It is also packed with powerful antioxidants, notably sesamol and sesamin, which are unique to sesame and help protect the body against cellular damage caused by free radicals. These antioxidants, largely lost during the refining process, have potent anti-inflammatory properties that can help reduce joint inflammation and support overall wellness. Furthermore, the oil contains essential minerals like zinc and copper, which play a crucial role in boosting the immune system.
The Flavour Factor
Beyond health, the switch is also about reclaiming authentic taste. Cold-pressed sesame oil imparts a distinct, nutty flavour that enhances a wide range of Indian dishes. Its robust character is perfect for the tempering (tadka) of dals and chutneys, where it complements spices like mustard seeds and curry leaves beautifully. It serves as a flavourful base for marinades, pickles, and South Indian gravies like pulikuzhambu. The oil's moderately high smoke point—around 177°C for unrefined varieties—makes it suitable for everyday cooking methods like sautéing and stir-frying, allowing it to infuse the entire dish with its unique character.
How to Incorporate It in Your Kitchen
Making the switch is straightforward. You can start by replacing your regular refined oil with cold-pressed sesame oil for daily cooking tasks. Use it for sautéing vegetables, preparing tadkas, or as a finishing oil drizzled over rice and dals for an extra layer of flavour. It also works wonderfully as a base for salad dressings when mixed with lemon juice or vinegar. When shopping, look for terms like 'cold-pressed,' 'wood-pressed,' or 'kachi ghani' to ensure you're getting a minimally processed, nutrient-dense product. For best results, store the oil in a cool, dark place to preserve its freshness and potent properties.
