Protein-Packed 10-Minute Paneer Bhurji
Paneer bhurji, a savoury scramble of Indian cottage cheese, is the perfect high-protein start to your day. It’s versatile, filling, and incredibly quick to prepare, especially if you have your basic ingredients ready. Often compared to scrambled eggs
for its texture and speed, this dish comes together in a single pan. To truly make it in 10 minutes, you need to be efficient. Using store-bought paneer, which you can crumble by hand, saves time. The process is straightforward: heat a little oil, sizzle some cumin seeds, and sauté finely chopped onions and green chillies until the onions become translucent. Then, add ginger-garlic paste and chopped tomatoes, cooking for a minute or two until they soften. Finally, add your basic powdered spices like turmeric, red chilli powder, and garam masala before adding the crumbled paneer. Mix well, cook for just two to three minutes to heat it through, and your bhurji is ready. Serve it with whole-wheat toast for a complete meal.
Instant Oats and Besan Chilla
For a healthy, fibre-rich option, the oats chilla is a winner. This savoury pancake is light, easy to digest, and requires minimal preparation. The key to making it instant is using quick oats or grinding rolled oats into a coarse flour. In a mixing bowl, combine the oat flour with besan (gram flour), which adds protein and helps bind the chilla. To this dry mix, add finely chopped vegetables like onions, carrots, and capsicum, along with green chillies and coriander leaves. Season with salt, turmeric, and cumin seeds. Gradually add water to form a smooth, pourable batter, similar to a dosa batter consistency. Let the batter rest for about 10 minutes if you have time, as this allows the oats to absorb water. Then, heat a non-stick tawa, lightly grease it with oil, and pour a ladleful of batter, spreading it into a circle. Cook for a couple of minutes on each side until golden brown and cooked through.
Classic and Quick Poha
Poha is arguably the champion of fast Indian breakfasts. This flattened rice dish is light on the stomach yet satisfying. The most crucial step is rinsing the poha. Use a colander and wash the flakes under running water for a minute until they soften. Be careful not to let them sit in water for too long, or they will turn mushy. While the poha drains, heat oil in a pan and prepare the tempering. Add mustard seeds, and once they pop, add curry leaves, chopped onions, and green chillies. Sauté until the onions are soft. You can also add peanuts at this stage for extra crunch. Add turmeric powder, then add the softened poha, salt, and a pinch of sugar to balance the flavours. Gently toss everything together for a couple of minutes until the poha is heated through and has turned a lovely yellow colour. A final squeeze of lemon juice and a garnish of fresh coriander leaves elevate the dish instantly.
Tips for an Even Faster Morning
The secret to a sub-15-minute breakfast lies in meal prep. Over the weekend, chop onions, tomatoes, and green chillies and store them in airtight containers in the fridge. You can also pre-roast a large batch of semolina for upma or grind oats into flour for chillas. Keeping a well-organised spice box saves precious seconds searching for ingredients. Some people even prepare a basic onion-tomato masala base in a larger quantity, which can be used for various dishes, including paneer bhurji, significantly cutting down the cooking time. Having essentials like poha, oats, and besan always in your pantry ensures you're never caught without a quick breakfast option.
