Why Pan Size Is More Than Just Capacity
A recipe might call for a "medium saucepan," but what does that really mean? The most important factor isn't just the volume a pan can hold, but its surface area. A wide, shallow pan exposes more of the liquid's surface to the air, which dramatically speeds up evaporation. This is ideal if you want to get a good sear on vegetables or quickly reduce a pan sauce. On the other hand, a narrow, tall pot minimizes surface area, slowing evaporation down.
