Association Does Not Equal Causation

A person who enjoys risky behaviour might therefore get a small thrill from eating bitter foods, much like enjoying a scary rollercoaster. Another line of research points to genetics. Studies from Northwestern University show that how we perceive bitter tastes, particularly from caffeine, is linked to our genes. People who are genetically more sensitive to the bitterness of caffeine actually tend to drink more coffee, likely because they learn to associate the taste with the rewarding feeling of stimulation it provides. This shows that our food choices are complex, involving genetics, learned behaviour, and psychology—not a simple, direct causal link.

These compounds are linked to numerous health benefits, including supporting good gut health, reducing inflammation, and potentially lowering the risk of chronic diseases like heart disease. Coffee, one of the most popular bitter beverages, is a major source of antioxidants in many people's diets. The bitter compounds can stimulate digestion by triggering the release of saliva and other enzymes that help your body break down food more efficiently.

The next time you see a headline linking a certain food to a surprising health outcome or trait, take a moment to think critically. Look for the word "association" or "link." If you see it, ask yourself what other factors could be at play. Most observational studies, which look at large groups of people, can only identify these associations. Proving causation is much more difficult and often requires different types of studies, like randomised controlled trials. Remember that a single study is rarely the final word on any topic. Science builds knowledge slowly, through many different studies that are reviewed and replicated over time. A balanced diet full of variety is always a better bet than chasing benefits from a single 'superfood' or avoiding another based on a single, sensational headline.
