Place the chopped carrots and beetroot into your glass jar. 2. Add the ground mustard seeds and black salt. 3. Pour in the water, ensuring the vegetables are fully submerged. Stir well with a clean spoon. 4. Cover the mouth of the jar with a muslin cloth and secure it. 5. Place the jar in a sunny spot for 3 to 5 days, stirring it once daily with a dry, clean spoon. The drink is ready when it develops a tangy, slightly sour taste. Strain the liquid and refrigerate. The fermented vegetables can be enjoyed as a pickle.
