1. The Classic Masala Tadka
This is the quintessential way to liven up puffed rice, turning it into a savoury, anytime snack often called 'murmura chivda' or 'masala pori'. Start by heating a little oil in a wide pan. Add mustard seeds, and once they pop, toss in peanuts, curry
leaves, and a pinch of asafoetida (hing). Sauté until the peanuts are golden and the curry leaves are crisp. Turn the heat to low and add turmeric powder and red chilli powder, stirring quickly to prevent burning. Immediately add the puffed rice and mix thoroughly, ensuring every grain is coated in the fragrant, spicy oil. Keep stirring on low heat for a few minutes until the puffed rice is extra crispy. Let it cool completely before storing it in an airtight container. For extra crunch, you can also add roasted chana dal or cashews to the tadka.
2. Sweet and Earthy Jaggery (Gur)
For those with a sweet tooth, jaggery-coated puffed rice is a timeless and healthier treat. Begin by greasing a plate or tray with ghee. In a heavy-bottomed pan, melt grated or powdered jaggery with a teaspoon of ghee and a splash of water. Bring the mixture to a boil and cook, stirring continuously, until it thickens into a frothy syrup. To test if it’s ready, drop a small amount into a bowl of cold water; it should form a hard, brittle ball. Once the syrup is at the right consistency, turn off the heat, add a pinch of cardamom powder, and immediately fold in the puffed rice. Mix quickly until all the rice is evenly coated. Spread the mixture onto the greased plate to set as a 'chikki' or bar, or lightly wet your hands and form them into balls (ladoos) while the mixture is still warm.
3. Instant Bhel Puri Style (Churumuri)
When you crave the complex flavours of chaat without the fuss, this method, often called Churumuri in Karnataka, is perfect. It requires no cooking and comes together in minutes. In a large bowl, combine finely chopped onions, tomatoes, green chillies, and fresh coriander leaves. Sprinkle red chilli powder, chaat masala, and a pinch of salt over the vegetables. Squeeze a generous amount of lemon juice to bring the flavours together. Now, add the puffed rice and a handful of roasted peanuts. Some variations even suggest a drizzle of coconut oil or hot ghee for added flavour. Toss everything together quickly and serve immediately to enjoy the perfect contrast of crunchy puffed rice and zesty, fresh toppings before it gets soggy.
4. Mint and Coriander 'Green' Puffed Rice
This method uses a fresh, vibrant paste to coat the puffed rice, giving it a beautiful colour and an aromatic flavour. Start by making a paste. You can either blend fresh mint leaves, coriander leaves, and green chillies into a smooth paste with a little water, or deep-fry these ingredients until crisp and then grind them. In a pan, heat a tablespoon of ghee and add the green paste, sautéing it for a minute. Add salt and a pinch of turmeric. Finally, add the puffed rice and toss on a medium flame until every grain is coated with the green mixture and becomes crunchy. You can also mix in roasted cashews or peanuts for extra texture. A final sprinkle of chaat masala at the end adds a tangy finish to this uniquely herbaceous snack.
5. A Modern Cheesy Herb Twist
For a completely different, non‐traditional flavour profile, try a cheesy herb coating. This is especially a hit with kids and is incredibly simple. Gently toast the puffed rice in a dry pan over low heat for a few minutes to ensure it's perfectly crisp, then transfer it to a large bowl. While the puffed rice is still warm, drizzle a very small amount of melted butter or olive oil over it. Immediately sprinkle a generous amount of cheese powder (the kind used for popcorn), along with dried herbs like oregano or mixed Italian herbs, and a pinch of garlic powder. Toss everything thoroughly so the seasoning sticks to the lightly coated grains. The warmth of the rice will help the flavours meld. It’s a fast, savoury snack that tastes like a gourmet cheese puff.
