1. A Large Glass Fermentation Jar
This is where the magic happens. A one- or two-gallon glass jar is the gold standard for home brewing. Glass is non-reactive, meaning it won't leach harmful chemicals into your acidic brew, which is a risk with some plastics and metals. It’s also transparent,
allowing you to watch your SCOBY (Symbiotic Culture of Bacteria and Yeast) work and spot any potential issues. A wide-mouth jar makes it easy to add ingredients and retrieve your SCOBY after fermentation. While you can buy purpose-built jars, many brewers start with large, thoroughly cleaned food jars.
2. A SCOBY and Starter Tea
The SCOBY is the living culture that transforms sweet tea into tangy kombucha. You can grow your own from a bottle of store-bought raw kombucha, but for your first time, it's easiest to get a healthy SCOBY and at least one cup of starter tea from a fellow brewer or an online supplier. The starter tea is simply strong, mature kombucha from a previous batch. Adding it to your new sweet tea lowers the initial pH, creating an acidic environment that protects the brew from mould and unwanted bacteria.
3. A Breathable Cloth Cover and Rubber Band
Your kombucha needs to breathe, but it also needs to be protected from dust, debris, and fruit flies. Do not seal the jar with an airtight lid during the first fermentation. Instead, use a piece of tightly woven, clean cloth like a tea towel, an old t-shirt, or a few layers of coffee filters. Avoid cheesecloth, as the weave is often too loose and can let tiny pests through. Secure the cover tightly over the mouth of the jar with a sturdy rubber band.
4. A Stockpot for Brewing Tea
Before you can ferment, you need to brew a large batch of sweet tea. A standard kitchen stockpot is perfect for this task. You'll use it to boil water, dissolve the sugar, and steep your tea. While many homebrewers fear any contact between kombucha and metal, using a stainless steel pot to brew your tea is perfectly safe. The key is that the acidic fermentation itself doesn't happen in a reactive metal container. Brief contact during preparation is not a problem.
5. Airtight Bottles for Secondary Fermentation
The first fermentation creates kombucha, but the second fermentation creates carbonation. To get that signature fizz, you'll need pressure-safe, airtight bottles. The most popular and reliable choice are flip-top or swing-top bottles made of thick glass, which are designed to hold pressure. You can also reuse commercial kombucha bottles if the caps still form a tight seal. Avoid using standard mason jars for carbonation, as they are not designed to handle the pressure build-up and can break.
6. A Funnel for Easy Bottling
Once your first fermentation is complete and you're ready to bottle, a simple funnel will make the process much cleaner and easier. It helps you transfer the kombucha from your large brewing jar into the narrower necks of your secondary fermentation bottles without spilling your precious brew. A simple plastic or stainless steel kitchen funnel is all you need for this step.
7. Basic Ingredients: Tea and Sugar
While not 'equipment' in the traditional sense, you can't brew without them. The SCOBY feeds on sugar and the nutrients in tea. For the best results, start with plain black or green tea bags (or loose-leaf) and simple white cane sugar. Avoid using herbal teas or teas with oils, like Earl Grey, for your primary fermentation, as they can damage the SCOBY over time. These basic, inexpensive ingredients are the fuel for a healthy and productive brew.
