International set these standards. The primary requirements are that any surface touching food must be non-toxic, non-absorbent, and easy to clean and sanitize. For commercial kitchens, FSSAI often requires materials like grade 304 stainless steel for any surface that touches food or water because it is smooth, non-corrosive, and durable.

Making safer choices is about knowing what to look for. For cooking utensils, food-grade silicone, stainless steel, and certain hardwoods are excellent options. Food-grade silicone is heat-resistant and flexible, making it great for spatulas and bakeware, but ensure it is certified and not mixed with plastic fillers. Stainless steel is durable, non-reactive, and easy to sanitize, making it a top choice for everything from whisks to mixing bowls. For wooden tools, opt for hardwoods like acacia or olive wood, as they are less porous and more durable than softwoods. It’s wise to avoid or limit the use of plastic utensils for cooking, as they can degrade with heat and friction, potentially releasing chemicals.

Take a moment to audit the tools in your own kitchen. Discard any items that are chipped, cracked, or deeply scratched, as these defects make them impossible to clean effectively. When buying new tools, look for a food-grade certification or choose reputable brands known for quality materials. Remember that even the best tools need proper care. Utensils should be washed thoroughly with soap and water, and staff should be trained to hold them by the handles.
