Store-bought paneer can sometimes be hard and rubbery. The fastest way to fix this is to soak the block in hot, salted water for about 10-15 minutes before cubing it. This not only softens the paneer, making it spongy and delicious, but also seasons it from
within. For tofu, the opposite is key: pressing it is a non-negotiable step. Wrap the tofu block in a few paper towels, place something heavy on top for 15-20 minutes, and let the excess water drain out. A well-pressed tofu will absorb marinades better and crisp up beautifully instead of turning soggy.
Hack 2: Cut Smart for Faster Cooking
This might sound obvious, but the size and shape of your paneer or tofu pieces significantly impact cooking time. For quick stir-fries and bhurjis, smaller cubes or a coarse crumble are your best friends. Thinner slices work wonderfully for pan-searing, as they cook through in minutes and develop a lovely golden crust. A dish like paneer or tofu bhurji, where it's crumbled, can be ready in under 15 minutes, making it a weeknight champion.

While slow-simmered curries are comforting, they aren't ideal for a Tuesday night. Instead, turn to high-heat cooking methods. A quick stir-fry in a hot pan with vegetables is a fantastic way to get dinner on the table fast. Pan-searing or grilling cubes of marinated paneer or tofu takes just a few minutes and adds a delightful smoky flavour. These can then be tossed with a simple sauce, wrapped in a roti, or added to a salad. Another great option is steaming marinated paneer cubes for 5-7 minutes for a soft, flavourful, and oil-free protein boost.
Hack 5: The All-Purpose Masala Base
Instead of starting from scratch every night, have a go-to quick masala base. Sautéing finely chopped onions, tomatoes, ginger, and garlic until soft is the foundation of countless Indian dishes.
