Protein-Packed Paneer Bhurji
Paneer Bhurji, a popular North Indian dish, is the vegetarian equivalent of scrambled eggs and a fantastic way to start your day. Made from crumbled paneer (Indian cottage cheese), it’s a powerhouse of protein and calcium, essential for muscle health
and strong bones. Its combination of protein and healthy fats provides sustained energy and keeps you feeling full for longer, helping to prevent mid-morning snack cravings. Being naturally low in carbohydrates, it's an excellent choice for those managing their carb intake. To whip up a 10-minute version, simply heat a little oil in a pan, and sauté finely chopped onions, tomatoes, and green chillies for a few minutes. Add basic spices like turmeric, red chilli powder, and a pinch of garam masala. Finally, add the crumbled paneer, mix well, and cook for another two minutes until everything is heated through. Serve it hot with toast, roti, or paratha for a wholesome and incredibly fast breakfast.
Fibre-Rich and Savoury Oats Chilla
For those who aren't fond of sweet oatmeal, the Oats Chilla is a game-changer. This savoury pancake is not only delicious but also packed with health benefits. Oats are an excellent source of dietary fibre, particularly a soluble fibre called beta-glucan, which promotes a feeling of fullness, aids digestion, and helps maintain a healthy gut. This high-fibre content, combined with a low-calorie count, makes oats a great addition to any diet. A quick chilla can be made by grinding instant oats into a flour. Mix this oat flour with a bit of besan (gram flour) for protein, finely chopped vegetables like onions, capsicum, and tomatoes, and spices such as cumin powder and turmeric. Add water to form a batter with a pourable consistency, similar to a regular pancake batter. Let the batter rest for just a couple of minutes to thicken. Then, pour a ladleful onto a heated non-stick pan, spread it into a circle, and cook on both sides until golden brown. It’s a versatile dish that provides sustained energy from complex carbohydrates.
Classic and Quick Poha
Poha, made from flattened rice, is a beloved breakfast staple across India for good reason. It's incredibly light on the stomach, easy to digest, and can be prepared in under 10 minutes. Poha is a good source of healthy carbohydrates, which provide a quick energy boost to start your day right. It's also gluten-free and very low in fat. The traditional preparation involves adding ingredients like peanuts, which contribute protein, and curry leaves, which are rich in iron and vitamins. To make instant poha, you don't need to soak it for a long time. Simply rinse the thick poha flakes in a strainer with water and let them sit for a few minutes to soften. Meanwhile, heat oil in a pan and add mustard seeds, cumin seeds, curry leaves, and chopped onions. Sauté for a minute, add turmeric powder, and then add the drained poha. Mix gently, cover, and let it steam for about two minutes. Finish with a squeeze of lemon juice and a garnish of fresh coriander for a zesty and refreshing meal.
