Kokum, or Garcinia indica, is a small, deep-purple fruit native to the Western Ghats of India. A staple in the coastal cuisines of Goa, Maharashtra, and Karnataka, it's prized for its unique sour and slightly sweet flavour. The outer rind of the fruit is typically
dried in the sun, preserving it for use throughout the year. This dried kokum is then used as a souring agent in curries and dals, or, most famously, transformed into a vibrant and refreshing sherbet. While it's related to the mangosteen, kokum has a distinct taste profile that makes it an unforgettable part of Indian culinary heritage.

Beyond its delightful taste, kokum is a powerhouse of benefits, making it more than just a flavouring agent. Let it simmer for 10-15 minutes until the mixture thickens into a syrup. For extra flavour, add a teaspoon of roasted cumin powder and black salt. Once cooled, strain the mixture through a sieve, pressing down on the pulp to extract all the juice. This concentrate can be refrigerated for several weeks.
