What Exactly Is Kanji?
Kanji is a fermented beverage traditionally made from a few simple ingredients: black carrots (kali gajar), water, salt, and coarsely ground mustard seeds. Originating from the northern states of India like Punjab, Uttar Pradesh, and Rajasthan, it's most
popular during the winter and the festival of Holi. The preparation involves combining these ingredients in a large glass or ceramic jar and letting it ferment in the sun for several days. This process transforms the simple carrot juice into a tangy, pungent, and deeply flavourful drink that is both a digestive aid and a refreshing appetiser.
The Science of Fermentation
The magic behind Kanji lies in lacto-fermentation. When the carrots, salt, and mustard are left to sit in water, naturally present microbes, primarily Lactic Acid Bacteria (LAB), begin to feast on the natural sugars in the carrots. These beneficial bacteria, including strains like Lactobacillus and Pediococcus, convert the sugars into lactic acid. This not only preserves the drink but also creates a probiotic-rich environment. A single glass of well-fermented Kanji can contain billions of live, gut-friendly bacteria, rivalling many commercial probiotic supplements. The mustard seeds are not just for flavour; they contain antimicrobial compounds that help prevent the growth of harmful bacteria during fermentation.

While Kanji can be made with red carrots and beetroot, the traditional use of black carrots is what makes it exceptionally potent. Black carrots are one of the richest natural sources of anthocyanins, the powerful antioxidants responsible for their dark purple colour.
