version, you'll need crumbled paneer, finely chopped onion and tomato, and your basic masalas. Heat a tablespoon of oil or butter in a pan, and once warm, add cumin seeds. As they sizzle, toss in one chopped onion and a slit green chilli, and sauté for two minutes until the onion softens. Add one finely chopped tomato, along with turmeric, red chilli powder, and salt to taste. Cook for another two minutes until the tomatoes are soft. Finally, add about 200 grams of crumbled paneer. Mix everything well, and cook for just two to three minutes—overcooking will make the paneer chewy. Garnish with fresh coriander and serve hot with toast or roti. For an even faster version, you can prepare a basic onion-tomato masala base in advance.
Quick & Savoury Oats Chilla
Oats Chilla is a healthy, savoury pancake that combines the goodness of oats with the binding power of besan (gram flour). This recipe is perfect for busy mornings because it requires no fermentation. For the quickest version, use instant or quick-cooking oats. In a mixing bowl, combine half a cup of quick-cooking oats, half a cup of besan, and finely chopped vegetables like onion, tomato, and capsicum. Add spices like turmeric powder, red chilli powder, cumin powder, and salt. Pour in about three-quarters of a cup of water and whisk to form a smooth, flowing batter without lumps. Let the batter rest for 5-10 minutes; the oats will absorb some water, so you may need to add a splash more to get the right consistency. Heat a non-stick tawa or pan, lightly grease it with oil, and pour a ladleful of batter, spreading it into a circle. Cook on medium heat for 2-3 minutes until the bottom is golden and crisp, then flip and cook the other side. These chillas are packed with fibre and protein, making a filling and nutritious start to your day.
Classic Poha in a Hurry
Poha, or flattened rice, is one of India's most beloved quick breakfasts. The secret to perfect, fluffy poha that isn't mushy is in the preparation. Use medium or thick poha, not the thin variety. Place two cups of poha in a colander and rinse it quickly under running water for about 30 seconds—do not soak it. Let it drain and rest for about five minutes. While it rests, heat a tablespoon of oil in a pan. Add mustard seeds, and once they pop, add a handful of peanuts and sauté until golden. Then add a chopped onion, a few curry leaves, and a slit green chilli, cooking until the onion is translucent. Add a pinch of turmeric, salt, and a teaspoon of sugar, then add the rested poha. Fold everything together gently to avoid mashing the grains. Cover and cook on low heat for just two minutes to let the poha steam and absorb the flavours. Turn off the heat, squeeze some fresh lemon juice over it, garnish with coriander, and serve immediately. It’s a light, refreshing, and incredibly fast meal.
