Is it even monsoon without a bhutta? The sight of a street vendor fanning hot coals, roasting corn on the cob, and rubbing it with salt, chilli, and a squeeze of lime is the very definition of this season. While corn is available for longer, the desi
variety that peaks during the rains is smaller, less sweet, and has a wonderfully chewy, starchy texture. It’s not just a snack; it's a sensory experience. The smoky char from the coals combined with the tangy, spicy masala creates a flavour bomb that feels custom-made for a cool, rainy evening. It’s also packed with fibre, which aids digestion—a common concern during the humid monsoon months.
Karela (Bitter Gourd): The Healthy Bite
Many turn their noses up at bitter gourd, but the monsoon is the perfect time to give it another chance. This is when karela is at its freshest and, arguably, least astringent. Traditional wisdom holds that bitter foods are excellent for the body during this season. Karela is packed with antioxidants and compounds that help boost immunity and purify the blood, providing a natural defence against common monsoon ailments. When sliced thin and fried to a crisp (karela fry) or stuffed with a flavourful masala and pan-seared (bharwa karela), its bitterness transforms into a complex, earthy note that is deeply satisfying. Lauki (Bottle Gourd): The Cooling Comfort
Often dismissed as bland, lauki is a true monsoon superstar. Its high water content (over 90%) makes it incredibly hydrating and easy to digest, providing a much-needed cooling effect in the humid weather. This is why it’s a staple in monsoon diets. Its subtle flavour is its greatest strength, allowing it to act like a sponge for spices. Whether in a simple lauki ki sabzi with tomatoes and cumin, a rich and creamy lauki kofta curry, or even a sweet halwa, this humble gourd delivers comfort without feeling heavy. It’s low in calories and rich in fibre, making it a perfect choice for a light yet nourishing meal on a damp day.
Parwal (Pointed Gourd): The Versatile Staple
Parwal, or pointed gourd, is a hardy vine vegetable that thrives in the rainy season. It has a firm texture and a mild, slightly nutty flavour that holds up beautifully in a variety of dishes. Unlike some other gourds, it doesn’t turn mushy easily, making it ideal for robust curries and fries. A simple stir-fry with potatoes (Aloo Parwal) is a classic comfort dish in many Indian homes. Rich in Vitamin A, Vitamin C, and antioxidants, parwal is another vegetable believed to help keep seasonal infections at bay. Its seeds are edible and provide a lovely textural contrast when the vegetable is young and tender.
Tinda (Indian Squash): The Tender Delight
Tinda, also known as Indian round gourd or apple gourd, is another monsoon favourite. When picked young, these small, green orbs are incredibly tender and have a delicate, sweet flavour. They cook quickly and absorb the flavours of the spices they are cooked with, making them perfect for a quick weeknight sabzi. A simple preparation with cumin seeds, turmeric, and coriander powder allows its natural taste to shine. Like its cousin lauki, tinda is easy on the stomach and provides hydration. Look for small, smooth-skinned tindas without any blemishes for the best taste and texture.
Suran (Yam): The Earthy Foundation
While leafy greens are often avoided during monsoon due to the risk of contamination, root vegetables and tubers like suran (Jimikand or Elephant Foot Yam) are at their peak. Suran offers an earthy, satisfying, and starchy alternative. It has a unique texture, somewhat like a potato but denser and more flavourful. It’s a fantastic source of energy and keeps you full for longer, perfect for those days when the rain makes you feel sluggish. It shines in dishes like Suran ki Sabzi, where it's often boiled and then fried with a host of aromatic spices, or in delectable kebabs where its firm texture works wonders.
