The Science of Salting
Salt does more than just make food taste “salty.” Chemically, it enhances our perception of sweetness, suppresses bitterness, and even unlocks aroma molecules that improve flavour. Its main power, however, comes from osmosis. When salt touches food, it draws
moisture out of its cells. This is why salting vegetables like eggplant or cabbage before cooking helps prevent a soggy result; the excess water is pulled out first. For meats, this process works in two stages. First, salt pulls moisture to the surface. Then, over time, that salty liquid is reabsorbed, seasoning the meat deeply from within and helping it retain moisture during cooking. This is the principle behind a successful brine. The result is more flavourful and tender meat.
When to Salt: Early vs. Late
The timing of when you add salt determines its effect. Salting dense meats like roasts or even some cuts of steak a day, or at least an hour, ahead of time allows for deep seasoning and better moisture retention. For quicker-cooking items like delicate seafood, it's best to salt just before cooking to avoid altering the texture too much. When making soups or stews where liquids will reduce, it's wise to salt lightly at the beginning and then adjust at the end. This prevents the dish from becoming overly salty as the water evaporates. A final sprinkle of a coarse or flaky salt after cooking adds a textural crunch and a bright burst of flavour, which is different from salt that has been cooked into a dish. Layering salt at different stages can create more complex and well-rounded flavours.
The Role of Acid in Cooking
Acidic ingredients like citrus juice, vinegar, wine, and tomatoes are flavour balancers. They cut through richness, brighten dull flavours, and provide a necessary contrast to sweetness and fat. Think of a squeeze of lemon over fried fish or the vinegar in a salad dressing. Beyond flavour, acid also has a powerful effect on texture. It can denature and break down proteins, which is why it's a key component in marinades for tenderizing meat. However, its effect on vegetables is the opposite. Acid strengthens the pectin in the cell walls of plants, which slows down the softening process during cooking. This means adding acid too early can result in vegetables that remain stubbornly firm, even after a long simmer.
When to Add Acid: Start vs. Finish
Because heat can degrade the bright, sharp notes of many acids, they are often added at the end of cooking. A splash of vinegar or a squeeze of lime just before serving can wake up an entire dish, making it taste more vibrant and alive. This is the best approach when you want a fresh, sharp acidic kick. Adding acid early serves a different purpose. In a long-simmered dish like a beef stew, adding wine or tomatoes at the beginning allows the flavours to mellow and integrate, creating a rich, deep base. But be mindful of its effect on vegetables. If you’re making a bean soup with tomatoes, the acid from the tomatoes will prevent the beans from becoming fully tender. In this case, it's better to cook the beans until they are soft and then add the acidic ingredients. The exception is when you want vegetables to hold their shape, such as in pickling.
The Consistency Rule for Comparisons
This brings us to the core principle: when you're comparing results, you must keep your timing consistent. If you're testing two different brands of canned tomatoes for a sauce, you can't salt one batch at the start and the other at the end. The difference you taste might not be the tomatoes, but the effect of the salt's timing. The same goes for acid. This is why standardized recipes are critical in professional kitchens; they ensure every plate that goes out is the same. Consistency eliminates variables, so you know exactly what's responsible for the final flavour and texture. By treating the timing of salt and acid as a distinct technique, you can diagnose your own cooking more accurately and ensure you are making a fair comparison.
