The fundamental difference between cold brew and hot coffee comes down to chemistry. Brewing is simply an extraction process, using water as a solvent to pull soluble compounds out of coffee grounds. When you use hot water, this process is fast and aggressive.
Heat accelerates the extraction of oils and acids, including compounds like chlorogenic acids that give coffee its sharp, sometimes harsh, bite. Cold brew, on the other hand, relies on time instead of temperature. By steeping grounds in cold or room-temperature water for 12 to 24 hours, the extraction is slow and gentle. This method dissolves different compounds at different rates, and many of the components responsible for high acidity are simply left behind. Studies have shown that this can result in coffee that is up to 70% less acidic than its hot-brewed counterpart, making it noticeably smoother and gentler on the stomach for many people.
Unlocking Natural Sweetness
That same slow, patient extraction process is also responsible for cold brew's signature sweetness. Hot brewing can extract bitter compounds that often mask the more delicate, sweet notes inherent in the coffee bean. Because cold water is less effective at pulling out these bitter-tasting molecules, the natural sugars and flavour profiles of the coffee itself become much more prominent. The resulting brew often highlights rich, decadent notes of chocolate, caramel, and nuts, which are sometimes overshadowed in a hot brew. This creates a cup that tastes naturally sweeter and more balanced, often reducing the need for added sugar or milk to cut through any bitterness. The lower acidity also plays a role, as a less acidic environment can make it easier for our taste buds to perceive sweetness.
How to Make Perfect Overnight Cold Brew
The beauty of cold brew is its simplicity. You don't need fancy equipment, just a large jar or pitcher, a filter, and a bit of patience. First, choose your coffee. A medium to dark roast is often recommended as its flavour profile lends itself well to the chocolatey, rich notes that cold brew enhances. Use a coarse grind, similar to the texture of breadcrumbs, to prevent the final brew from becoming cloudy or sludgy. The ratio is key. A good starting point is a 1:8 coffee-to-water ratio by weight for a ready-to-drink brew. For example, use 100 grams of coffee for 800 grams (or 800 millilitres) of water. Combine the coarse coffee grounds and cold, filtered water in your jar. Stir gently to ensure all the grounds are saturated. Cover the container and let it steep. You can leave it on your counter at room temperature or place it in the refrigerator for anywhere from 12 to 24 hours. A longer steep time will result in a stronger, more concentrated coffee. After steeping, it’s time to filter. You can use a fine-mesh sieve lined with a cheesecloth or a dedicated cold brew filter system. Pour the coffee slowly through the filter into a clean container. Be patient and let it drip through without pressing on the grounds, which can introduce bitterness. The resulting liquid is your cold brew concentrate, which can be stored in the fridge for up to a week. To serve, dilute it with water or milk to your desired strength and pour over ice.

While many drinkers report that cold brew is easier on their digestive system, the benefits are primarily linked to its lower acidity. For individuals who experience acid reflux, GERD, or general stomach discomfort from regular coffee, a low-acid option can make a significant difference. The reduced acid content is also gentler on tooth enamel. However, it's important to note that the caffeine content is still robust, and depends heavily on your coffee-to-water ratio and steep time. Ultimately, the primary draw remains its remarkably smooth and rich flavour, a direct result of turning down the heat and letting time do the work.
