Here’s how to make a single serving in minutes. Ingredients: - 1/4 cup Quinoa, rinsed - 1/4 cup Moong Dal (split yellow lentils), rinsed - 1 cup mixed vegetables (carrots, peas, beans), chopped - 1 teaspoon Ghee or oil - 1/2 teaspoon Cumin seeds - A pinch of Asafoetida (hing) - 1/2 teaspoon Turmeric powder - Salt to taste - 2 cups Water Instructions: 1. Heat ghee or oil in a pressure cooker on medium heat. Add cumin seeds and asafoetida. 2. Once the seeds crackle, add the mixed vegetables and sauté for a minute. 3. Add the rinsed quinoa and moong dal, turmeric powder, and salt. Stir everything together for 30 seconds. 4. Pour in the water and mix well. Secure the lid of the pressure cooker. 5. Cook on high heat for 2-3 whistles (about 10-12 minutes). 6. Let the pressure release naturally. Open the lid, give it a good stir, and your comforting Khichdi is ready to eat. Garnish with fresh coriander if you have some.
Recipe 2: 15-Minute Vegetable Pulao
Vegetable Pulao is a fragrant and flavourful rice dish that can be easily adapted based on what you have in your pantry. Using a pressure cooker makes this a genuinely quick meal. Ingredients: - 1/2 cup Basmati rice, rinsed and soaked for 10 minutes - 1 cup mixed vegetables (potatoes, carrots, peas, corn) - 1 small Onion, sliced - 1 tablespoon Ghee or oil - 1/2 teaspoon Cumin seeds - 1 Bay leaf and 1-inch Cinnamon stick (optional, for flavour) - 1/2 teaspoon Ginger-garlic paste - 1/4 teaspoon Turmeric powder - 1/2 teaspoon Garam masala - Salt to taste - 1 cup Water Instructions: 1. Heat ghee or oil in a pressure cooker. Add cumin seeds, bay leaf, and cinnamon stick. Sauté for 30 seconds. 2. Add the sliced onions and cook until they turn translucent. Add the ginger-garlic paste and cook for another minute. 3. Add all the mixed vegetables, turmeric, garam masala, and salt. Stir-fry for 2 minutes. 4. Drain the soaked rice and add it to the cooker. Gently mix to coat the rice with the spices. 5. Pour in 1 cup of water, stir, and close the lid. Cook on high heat for 2 whistles (about 10 minutes). 6. Allow the pressure to settle before opening. Fluff the rice gently with a fork and serve hot with a side of yogurt or pickle.
Boost The Protein Even Further
While these meals are already protein-rich, you can easily enhance their nutritional value. For the Veg Pulao, consider adding cubed paneer, tofu, or a handful of soya chunks along with the vegetables.
