are deep-fried, sometimes in oil that has been reused multiple times. This process not only loads the food with unhealthy fats and excess calories but can also introduce harmful compounds. Furthermore, high levels of salt are common to enhance flavour, which can contribute to high blood pressure. Concerns about hygiene, such as the use of unclean water or improper food handling, also pose a risk of foodborne illnesses.
A Healthier, Homemade Solution
Making the switch to homemade snacks doesn't mean sacrificing flavour. By using modern cooking methods and wholesome ingredients, you can create snacks that are both delicious and nourishing. Air frying, for example, gives you that satisfying crispiness with up to 80% less fat than deep frying. It works by circulating hot air, cooking food to a perfect golden brown with minimal oil. Pairing this technique with nutrient-dense ingredients like paneer and millets elevates your snack game. Paneer is a fantastic source of protein and calcium, great for muscle and bone health, while being low in carbohydrates. Millets are gluten-free grains packed with fibre, antioxidants, and essential minerals that aid digestion and help manage blood sugar levels.
Recipe: Air-Fried Paneer Tikka
This recipe delivers the classic smoky flavour of paneer tikka without the need for a tandoor or excessive oil. The paneer comes out soft on the inside and perfectly charred on the outside. Ingredients: - 250g paneer, cut into 1-inch cubes - 1/2 cup thick curd (yoghurt) - 1 tablespoon gram flour (besan) - 1 teaspoon ginger-garlic paste - 1 teaspoon Kashmiri red chilli powder - 1/2 teaspoon turmeric powder - 1 teaspoon coriander powder - 1/2 teaspoon garam masala - 1 teaspoon dried fenugreek leaves (kasuri methi), crushed - Salt to taste - 1/2 onion, cut into chunks - 1/2 capsicum, cut into chunks - 1 tablespoon of oil Instructions: 1. In a bowl, whisk together the curd, gram flour, ginger-garlic paste, and all the powdered spices to create a smooth marinade. 2. Gently add the paneer cubes, onion, and capsicum to the marinade. Toss until everything is evenly coated. Let it marinate for at least 30 minutes. 3. Preheat your air fryer to 190°C (380°F) for about 5 minutes. 4. Arrange the marinated paneer and vegetables in a single layer in the air fryer basket. You can thread them onto small skewers if you like. 5. Air fry for 10-12 minutes, flipping halfway through. At the halfway point, you can lightly brush or spray them with a little oil for extra crispiness. 6. The paneer tikka is ready when it's golden brown with slightly charred edges. Serve hot with a squeeze of lemon.
Recipe: Wholesome Millet Bhel
A guilt-free take on a classic, this bhel uses millet flakes instead of puffed rice for a healthier, crunchier, and more nutritious snack. It's quick, easy, and endlessly customisable. Ingredients: - 2 cups mixed millet flakes (like jowar, bajra, or ragi flakes) - 1 medium onion, finely chopped - 1 medium tomato, finely chopped - 1 boiled potato, diced (optional) - 1/4 cup roasted peanuts - 2 tablespoons fresh coriander, chopped - 1 green chilli, finely chopped (adjust to taste) - 1 tablespoon lemon juice - 1 teaspoon chaat masala - Rock salt to taste - Green chutney and tamarind chutney to taste (optional) Instructions: 1. If your millet flakes are not pre-roasted, dry roast them in a pan over low heat for a few minutes until they are crisp. Let them cool completely. 2. In a large mixing bowl, combine the roasted millet flakes, chopped onion, tomato, boiled potato, and roasted peanuts. 3. Add the chopped green chilli, coriander leaves, chaat masala, and rock salt. Toss everything together gently. 4. Drizzle with lemon juice and add chutneys if you are using them. Mix well until all the ingredients are combined. 5. Serve immediately to ensure the bhel stays crunchy. You can garnish with sev or pomegranate seeds for extra texture and flavour.
