best results, use lukewarm water, which helps the flour absorb moisture efficiently and relaxes the gluten faster. The ideal consistency is a soft, slightly sticky dough that feels like playdough. Kneading is not just about mixing; it’s about developing the gluten network that gives the roti its structure and elasticity. A thorough 8-10 minute knead is essential. Once kneaded, the dough must rest for at least 20-30 minutes, covered with a damp cloth. This resting period is non-negotiable. It allows the gluten to relax and moisture to distribute evenly, making the dough easier to roll and ensuring a softer final product.
The Power of Heat: Your Tawa's Role
Heat management is the second pillar of soft rotis. The temperature of your tawa (griddle) can make or break your efforts. Cooking on a pan that is too cold is a common mistake that leads to hard, cracker-like rotis. Low heat causes a slow evaporation of moisture, so by the time the roti is cooked, it's completely dehydrated. Conversely, a tawa that is excessively hot will scorch the outside before the inside cooks, resulting in burnt spots and a raw interior. The sweet spot is a medium-high heat. A simple way to test if your tawa is ready is to sprinkle a few drops of water on it; if they sizzle and evaporate almost instantly, the temperature is right. Maintaining this consistent heat is key, especially when making a large batch, as the tawa can get progressively hotter.
The Symphony: Adjusting Dough and Heat Together
This is where the art and science of roti-making converge. A perfectly prepared dough and a correctly heated tawa are essential, but their interaction is what truly defines the outcome. The two must be adjusted in harmony. For instance, a softer, more hydrated dough cooks faster. It requires a consistently hot tawa to quickly turn the internal moisture into steam, causing the roti to puff up beautifully. A stiffer dough, on the other hand, might need a slightly more moderate heat to allow it to cook through without becoming hard. Similarly, the thickness of the rolled roti dictates the cooking time. A thinner roti needs to be cooked quickly on high heat, while a slightly thicker one benefits from a moment longer on each side to ensure it's cooked evenly. Pay attention to how the dough behaves on the tawa and be prepared to adjust the flame accordingly.
The Final Puff and Proper Storage
The magical puff, known as the 'phulka', is the final step that guarantees softness. This puff is created by trapped steam expanding inside the roti's layers. After cooking the roti on both sides on the tawa, you can transfer it to a direct flame for a few seconds using tongs. The direct heat causes the trapped water to vaporise instantly, inflating the roti like a balloon. Alternatively, you can achieve a puff on the tawa itself by gently pressing down on the roti with a folded kitchen towel. Once the roti is cooked and puffed, how you store it is just as important. Stacking the hot rotis immediately in a casserole or a container lined with a cloth traps the steam. This residual moisture helps keep the entire stack soft and prevents them from drying out as they cool.
