Hearty Lentil and Vegetable Kebabs
Lentils are a nutritional powerhouse, and a single cooked cup offers around 18 grams of protein. These kebabs are a fantastic way to turn them into a fun, portable lunch. To make them, combine cooked masoor or chana dal with grated vegetables like carrots
and zucchini, spiced with ginger, garlic, and garam masala. Use a binder like besan (gram flour), which adds even more protein, and shape them into kebabs. Pan-fry or bake a batch over the weekend, and you have a ready-to-go lunch for days. They are delicious cold or can be quickly warmed up, served with a side of mint-yogurt chutney for an extra protein and flavour kick.
Spiced Chickpea Stuffed Sweet Potatoes
This is meal prep at its finest and a perfect example of a balanced, satisfying meal. A single cup of chickpeas contains about 15 grams of protein, hitting our target perfectly. Simply bake a few sweet potatoes at the start of the week. For lunch, just reheat a potato and top it with spiced chickpeas. You can toss a can of chickpeas with chaat masala, cumin, and a squeeze of lemon juice, or gently warm them with chopped spinach. The combination of the fluffy sweet potato and the firm, flavourful chickpeas is a winner. For an extra creamy texture and more protein, add a dollop of Greek yogurt.
Paneer and Quinoa Power Bowl
Paneer is a go-to protein for many vegetarians, with a 100-gram serving providing roughly 18 grams of protein. Instead of a heavy curry, make it the star of a vibrant lunch bowl. Sauté cubes of paneer with your favourite spices until golden brown. Serve it over a bed of cooked quinoa, which is one of the few plant foods that contains all nine essential amino acids. A cup of cooked quinoa adds another 8 grams of protein. Add some crunchy cucumber, tomatoes, and a lemon-tahini dressing to bring it all together for a lunch that's both nourishing and anything but boring.
No-Cook Creamy Bean Chaat
For days when you have absolutely no time to cook, this protein-packed 'chaat' is a lifesaver. The base is Greek yogurt, which delivers nearly double the protein of regular yogurt—about 17-20 grams per serving. Into a bowl, mix Greek yogurt with a cup of canned and rinsed kidney beans (rajma) and chickpeas (chole). Add finely chopped onion, tomato, and fresh coriander. Season with a pinch of roasted cumin powder and black salt. This refreshing, no-cook meal is crunchy, creamy, and takes less than five minutes to assemble, all while providing a significant protein boost to power your afternoon.
Moong Dal Cheela with Tofu Scramble
Moong dal, or split yellow lentils, can be transformed into savoury, high-protein crepes known as 'cheelas'. The batter, made from soaked and ground lentils, is naturally rich in protein. Two medium-sized cheelas can easily provide over 15 grams. Fill them with a spicy tofu scramble for an ultimate protein-packed lunch. Tofu offers around 10-15 grams of protein per 100g serving. Crumble firm tofu and sauté it with onions, turmeric, and chillies to create a bhurji-style filling. You can make the cheelas and filling in advance and simply assemble them for a quick, hot lunch.
