Understanding the Enemy: What Is Freezer Burn?
Freezer burn isn't a sign of spoilage, and the food is still safe to eat, but it dramatically impacts taste and texture. It occurs when moisture from the food escapes and turns directly into a gas in the cold, dry air of the freezer—a process called sublimation.
As the food loses its water molecules, it becomes dehydrated. At the same time, oxygen can seep in, causing changes in colour and flavour, resulting in those tough, leathery, or grayish spots. The ice crystals you see are often the food's own moisture that has migrated to the surface or the inside of the package.
Your First Line of Defence: The Close Wrap
The key to preventing freezer burn is to create a barrier that stops air from coming into contact with the food's surface. A tight initial wrap is the most critical step. This 'contact layer' should cling to the food as closely as possible, leaving no air gaps. This first wrap prevents moisture from escaping at the source. Think of it as giving the food its own protective skin before it faces the harsh, dry environment of the freezer. Without this tight seal, air pockets become breeding grounds for ice crystals and dehydration.
Choosing Your Materials Wisely
Different materials can serve as the first layer of protection. Plastic wrap is excellent for creating a tight seal around irregularly shaped items like cuts of meat or individual baked goods. Heavy-duty aluminum foil can also be used, but it can sometimes tear or impart a metallic taste if not used carefully. For long-term storage of items like steaks or chops, many experts recommend freezer paper. This specialty paper has a plastic or wax coating on one side that should be placed against the food. It provides a durable, moisture-resistant barrier that is more effective than wax paper for long-term freezing.
The Second Barrier: The Freezer Bag
Placing the tightly wrapped item inside a larger, heavy-duty freezer bag serves as a second, 'armor' layer. This step provides several benefits. First, it offers another barrier against air and moisture transfer. Second, it protects the more delicate inner wrap from tears or punctures, which would compromise the seal. Finally, using a freezer bag helps keep your freezer organized and prevents odours from transferring between different foods. When sealing the outer bag, it's important to press out as much excess air as possible. You can do this by hand or by using the water displacement method, where you submerge the nearly sealed bag in water to force the air out before closing it completely.
Best Practices for Different Foods
The double-wrapping technique can be adapted for almost anything you want to freeze. For meats and poultry, wrap each portion individually in plastic wrap or freezer paper before placing them together in a larger freezer bag. This prevents them from freezing into a solid block and allows you to thaw only what you need. Baked goods like muffins, brownies, or slices of cake also benefit from being wrapped individually in plastic wrap and then placed in a freezer bag. For liquids like soups, stews, or broths, it's best to cool them completely, then pour them into airtight containers or freezer bags, leaving about an inch of headspace to allow for expansion as the liquid freezes.
