The Magic of Fermentation
At its core, fermentation is a natural process where microorganisms like bacteria and yeasts break down substances into simpler forms. In the case of dosa and idli batter, which is made from a mixture of ground rice and urad dal (black lentils), naturally
occurring microbes get to work. These friendly bacteria, primarily Lactic Acid Bacteria (LAB) found on the surface of the grains, begin to consume the carbohydrates and sugars in the batter.
