and 60°C (40°F and 140°F). Within this range, harmful bacteria such as Salmonella and E. coli can multiply at an alarming rate, sometimes doubling in number in as little as 20 minutes. Leaving perishable food in this zone for too long dramatically increases the risk of foodborne illness. The goal is to get your leftovers below 4°C (40°F) promptly to halt this rapid bacterial growth.
Why Sealing Hot Food Is a Problem
When you put a lid on a container of hot food, you trap heat and steam. This creates a warm, moist environment that is a perfect incubator for bacteria. First, divide large quantities of food into smaller, shallow containers. A large pot of chili will cool much faster when portioned into several smaller containers with a food depth of two inches or less. Spreading food out on a sheet pan can also help it cool quickly. For liquids like soups or stews, you can place the smaller containers in an ice water bath and stir occasionally to release heat more rapidly. Using metal or glass containers can also help, as they transfer heat more effectively than plastic.
