The people handling your food are a critical link in the safety chain. Observe the waiters, servers, and any kitchen staff you can see. While a license itself doesn't guarantee perfect daily hygiene, its absence is a major warning sign that the establishment is operating outside of regulatory oversight.

Beyond the basic license, FSSAI also has a voluntary 'Hygiene Rating Scheme'. Restaurants are audited on everything from food handling and storage to pest control and water quality, and then awarded a rating, typically from one to five stars. This rating is meant to be displayed at the entrance, allowing consumers to make an informed choice. A high rating (4 or 5 stars) signals a strong commitment to food safety and is a credible, government-backed endorsement. While the scheme is still gaining traction and is not yet mandatory, restaurants that participate and score well are demonstrating a proactive approach to hygiene. Seeing this certificate provides an extra layer of confidence. Food delivery apps like Zomato and Swiggy also often display these ratings on a restaurant's profile.
5. What Are Online Reviews Saying?
In the digital age, crowd-sourced information is a powerful tool. Before visiting, spend a few minutes reading recent reviews on platforms like Google Maps, Zomato, or other food blogs. Look for specific keywords like "clean," "hygiene," "sick," "insect," or "fresh." While a single bad review might be an outlier, a recurring pattern of complaints about cleanliness, stale food, or stomach issues is a significant cause for concern. A recent survey of Bengaluru diners revealed pests and dirty kitchens or washrooms as top worries. Conversely, consistent positive feedback about a restaurant's cleanliness and food quality can provide valuable peace of mind.
