The trick to a 10-minute chilla is using instant or rolled oats, which you can quickly grind into a flour or use directly, combined with besan (gram flour) to help bind the batter. Many recipes require no grinding at all if you use quick oats.Quick Recipe:To create an instant batter, combine one cup of powdered oats with a quarter cup of besan in a mixing bowl. To this, add finely chopped vegetables like onions, tomatoes, and capsicum. Season with salt, half a teaspoon of cumin powder, and a pinch of turmeric. Add the rinsed poha to the pan, along with salt and a half teaspoon of sugar. Mix gently until all the flakes are coated in the yellow turmeric. Cover and cook on low heat for about two minutes.
