The Wonder of 'Vegetable Meat'
In India, raw green jackfruit, or 'kathal', is celebrated for its unique texture. Unlike its sweet, ripe yellow counterpart, green jackfruit has a neutral flavour and a fibrous, stringy consistency that uncannily mimics shredded meat like pulled pork
or chicken. This quality makes it a fantastic canvas for spices and sauces, as it absorbs flavours beautifully. Long before it became a global vegan trend, it was a beloved ingredient in countless traditional savoury dishes, from curries to stir-fries. Now, it’s finding a new identity as the star of modern, health-conscious snacks.
A Fiber-Rich, Healthy Choice
These sliders aren't just a treat for your taste buds; they're packed with nutritional benefits. Raw green jackfruit is an excellent source of dietary fiber, which is crucial for good digestive health. It's also rich in essential nutrients like vitamin C and potassium. The presence of antioxidants may help your body fight inflammation. By opting for jackfruit, you’re choosing a low-calorie, low-fat alternative to traditional meat fillings, making it a smart choice for anyone looking to eat healthier without sacrificing texture and satisfaction.
How to Prepare Your Jackfruit
Working with fresh, raw jackfruit requires a bit of prep, but it's well worth the effort. The fruit contains a sticky latex-like sap, so it's essential to oil your hands and your knife before you begin. Start by cutting the jackfruit into large, manageable pieces. Carefully slice away the thorny green outer skin and remove the hard central core. Chop the remaining flesh into smaller chunks. To soften the jackfruit and make it ready for shredding, you'll need to cook it first. Pressure cooking for one or two whistles or boiling in water for about 10-15 minutes until tender is the most effective method. If using canned green jackfruit, simply drain, rinse, and squeeze out the excess water.
Air-Fryer Jackfruit Slider Recipe
Once your jackfruit is cooked and tender, use a fork or your hands to shred it into a pulled-meat consistency. In a bowl, toss the shredded jackfruit with your favourite seasonings. A classic Indian-style mix could include ginger-garlic paste, turmeric, red chilli powder, garam masala, and a touch of amchur (dry mango powder) for tang. Add a tablespoon of oil to help it crisp up. Spread the seasoned jackfruit in a single layer in your air fryer basket. Air-fry at 200°C (400°F) for 15-20 minutes, shaking the basket halfway through. The jackfruit should be heated through, with delicious crispy edges. For a saucier version, you can toss the jackfruit with barbecue sauce before air frying.
Assembling the Perfect Sliders
Now for the fun part. Lightly toast some small slider buns, like soft pav bread, for the perfect bite. Spoon a generous amount of the hot, crispy air-fried jackfruit onto the bottom bun. The toppings are where you can get creative. Add a layer of crunchy, thinly sliced onions and a slice of fresh tomato. For a cooling contrast, add a dollop of mint-coriander chutney or a simple yogurt-based sauce. A drizzle of tangy tamarind chutney can also add another layer of complexity. If you prefer a creamy texture, a simple coleslaw or a spicy mayonnaise works wonderfully. Place the top bun on, and your delicious plant-based sliders are ready to serve immediately.
