Golden Pumpkin (Kaddu)
October is
peak season for pumpkin, or kaddu. This versatile vegetable, with its subtly sweet and earthy flavour, is a star in Indian kitchens. Far from being just a decorative gourd, it's packed with vitamins and can be used in a delightful array of dishes. For a classic North Indian comfort meal, a sweet and tangy Khatta Meetha Kaddu, made with spices like fenugreek and dried mango powder, is a perfect pairing with hot pooris. You can also blend cooked pumpkin into a velvety soup, thickened with a touch of coconut milk and spiced with ginger and turmeric. For a wholesome breakfast, try adding grated pumpkin to your paratha dough; it makes the flatbread incredibly soft and flavourful.
