The 15-Minute Chilli Paneer or Tofu
Forget takeout menus. This Indo-Chinese classic is incredibly fast to make at home. The secret is high heat and quick cooking. Start by tossing cubes of paneer or extra-firm tofu in a bowl with a dusting of cornflour, a splash of soy sauce, and a pinch
of black pepper. Heat a tablespoon of oil in a wok or large pan until it's very hot. Add the paneer or tofu and stir-fry for 2-3 minutes until golden and crisp. Remove it from the pan. In the same pan, toss in sliced onions, bell peppers, and some minced ginger and garlic. Stir-fry for another 2-3 minutes—you want the vegetables to stay crisp. While they cook, mix your sauce: soy sauce, a touch of vinegar, a little chilli sauce, and a teaspoon of sugar or honey. Paneer or tofu bhurji (a savoury scramble) is a protein powerhouse that comes together in minutes. Start by crumbling a block of paneer or extra-firm tofu. Heat a little oil or ghee in a pan and add cumin seeds. Once they sizzle, add finely chopped onions and sauté until translucent. Add chopped tomatoes, green chillies, and a bit of ginger-garlic paste. Cook for a few minutes until the tomatoes soften. Now for the flavour upgrade: add turmeric, a pinch of red chilli powder, and a generous sprinkle of pav bhaji masala or garam masala for a robust taste. Add the crumbled paneer or tofu, mix well, and cook for just 3-4 minutes until heated through. Finish with a squeeze of lemon juice and fresh coriander. It’s perfect with toast for a quick breakfast-for-dinner, or stuffed into a roti for a satisfying roll.
Lemony Herb-Crusted Tawa 'Steaks'
This method gives you flavourful, crusty portions of paneer or tofu without deep frying or long marination times. Slice a block of paneer or extra-firm tofu into thick, steak-like slabs. In a shallow dish, mix together lemon juice, olive oil, finely chopped garlic, dried oregano, chilli flakes, and salt. Pat the slabs dry and press them into the herb mixture, ensuring they are well-coated on both sides. Heat a non-stick tawa or frying pan over medium-high heat. Place the coated 'steaks' on the hot pan and cook for 3-4 minutes per side, until they develop a beautiful golden-brown crust. The direct heat caramelises the herbs and garlic, creating an instant flavour boost. Serve these alongside a quick salad or steamed vegetables for a complete, light, and protein-rich meal.
Quick Peanut Sauce Noodles
This dish is a lifesaver on a busy night. While your noodles of choice are boiling, you can prepare everything else. Crisp up some diced tofu or paneer in a hot pan and set aside. The real star is the five-minute peanut sauce. In a bowl, whisk together peanut butter, soy sauce, a little honey or maple syrup, a splash of rice vinegar, and some hot water to thin it to your desired consistency. Add a dash of sriracha or chilli oil if you like some heat. Once the noodles are cooked and drained, toss them with the sauce, the crispy paneer or tofu, and a handful of whatever vegetables you have—shredded carrots, sliced bell peppers, or steamed broccoli work well. Top with crushed peanuts and fresh coriander for a meal that tastes complex but was secretly simple.

The one-pan meal is the ultimate weeknight winner. For this, you need extra-firm tofu, pressed and cut into cubes. Toss the tofu and your favourite quick-cooking vegetables (like broccoli florets, sliced zucchini, and bell peppers) onto a baking sheet. Drizzle generously with olive oil, a big squeeze of lemon juice, and a heavy-handed sprinkle of black pepper and salt. Use your hands to make sure everything is evenly coated. Spread it all out in a single layer to ensure everything gets crispy, not steamy. Roast in a hot oven (around 200°C) for 15-20 minutes, flipping halfway through.
