The Foundation: The Power of Dahi
The hero ingredient behind both of our featured drinks is dahi, or homemade curd/yogurt. This fermented food is a powerhouse of probiotics, the beneficial live bacteria that support a healthy gut microbiome. While making dahi itself takes time to culture,
keeping a batch on hand means the following drinks can be whipped up in mere minutes. These friendly bacteria aid digestion, enhance nutrient absorption, and can even boost your immune system. By using dahi as a base, you're not just making a tasty beverage; you're creating a functional food that nourishes your body from the inside out.
1. The Cooling Classic: Masala Chaas (Spiced Buttermilk)
Masala Chaas is a beloved staple in countless Indian households, revered as both a summer cooler and a potent digestive aid. Unlike its thicker cousin, lassi, chaas is light, watery, and typically savoury. It's traditionally consumed after meals to soothe the stomach, reduce acidity, and prevent bloating, thanks to its probiotic content and the inclusion of digestive spices. The lactic acid and enzymes in chaas help break down food more efficiently, making you feel light and comfortable. Its hydrating properties, enriched with electrolytes like potassium, also make it perfect for replenishing fluids lost to the heat. To prepare a glass, simply take about half a cup of plain dahi in a blender. Add a cup of chilled water, a pinch of black salt (kala namak), and half a teaspoon of roasted cumin powder. For extra flavour and digestive benefits, you can add a small piece of ginger and a few fresh mint or coriander leaves. Blend for 30-45 seconds until smooth and frothy. That's it—a refreshing and gut-friendly drink is ready in under five minutes.
2. The Creamy Indulgence: Sweet Lassi
If chaas is the light, savoury digestive, lassi is its richer, creamier, and more indulgent counterpart. Originating from the Punjab region, lassi is a thick, yogurt-based drink often enjoyed as a filling snack or a satisfying accompaniment to a spicy meal. While both drinks are probiotic-rich, lassi's higher yogurt content makes it a significant source of calcium and protein, which are excellent for bone health. The probiotics in lassi help promote the growth of healthy bacteria in the gut, which can reduce bad cholesterol and strengthen your immune system. Making a classic sweet lassi is just as quick as making chaas. In a blender, combine one cup of thick, whole milk dahi, half a cup of milk or water (depending on your desired consistency), two to four tablespoons of sugar, and a few ice cubes. For a touch of classic flavour, add a pinch of ground cardamom. Blend everything on high speed until it becomes perfectly smooth, creamy, and frothy. You can pour it into a tall glass and enjoy immediately. For a popular variation, simply add half a cup of mango pulp to create a delicious Mango Lassi.
