This version is designed for speed, using a pressure cooker to get a fluffy, flavourful meal on the table in minutes.Ingredients: 1 cup Basmati rice, rinsed and soaked for 15-20 minutes 1 tablespoon ghee or vegetable oil 1 teaspoon cumin seeds 1 small onion, thinly sliced 1 teaspoon ginger-garlic paste 1 cup mixed vegetables (carrots, peas, beans, corn) Basic whole spices (1 bay leaf, 2 cloves, 1 small cinnamon stick - optional) 1/4 teaspoon turmeric powder 1/2 teaspoon garam masala Salt to taste 2 cups waterInstructions: 1. Heat ghee or oil in a pressure cooker on medium heat. Add cumin seeds and any whole spices you're using. Let them splutter for a few seconds. 2. Add the sliced onions and sauté until they become translucent. 3. Stir in the ginger-garlic paste and cook for another minute until fragrant. 4. Add the mixed vegetables, turmeric powder, and garam masala. Sauté for two minutes. 5. Drain the soaked rice and add it to the cooker, stirring gently to coat it with the spices. 6. Heat ghee or oil in a pressure cooker or a deep pot. 2. Add cumin seeds and asafoetida. Once the seeds pop, add the chopped onion and sauté until soft. 3. Add the chopped tomato and cook for a minute. 4. Stir in the turmeric powder and the mixed vegetables. Sauté for another minute. 5. Add the rinsed quinoa and masoor dal to the pot. Mix everything well. 6. Pour in the water, add salt, and bring to a boil. If using a pressure cooker, secure the lid and cook for 2 whistles (about 7-8 minutes). If using a pot, cover and simmer on low heat for 12-15 minutes, or until the dal and quinoa are fully cooked and mushy. Garnish with a squeeze of lime juice if desired.
