The Coastal Star: Kokum
If you’re from the Konkan coast, you already know the magic of kokum. For the uninitiated, Garcinia indica, or kokum, is a small, deep-purple fruit that is typically dried and used as a souring agent in curries and dals. But its true potential shines
in a glass. Traditionally used to make a refreshing sherbet, kokum is a powerhouse of benefits. It’s celebrated for its cooling properties, making it a natural antidote to the sweltering Indian heat. Beyond that, it’s a fantastic digestive aid, known to soothe acidity and improve gut health. The fruit is also rich in antioxidants, particularly garcinol, which helps fight free radicals in the body. Its flavour is unique—a tartness that is tangy and fruity without the sharp bite of lemon. This complex taste is what makes it a sophisticated base for a modern beverage.
A Modern Twist with Green Tea
While kokum is a traditional gem, pairing it with green tea elevates it into a contemporary wellness drink. Green tea needs no introduction; its health credentials are world-renowned. Packed with catechins like EGCG (epigallocatechin gallate), it’s a potent antioxidant that supports metabolism and promotes overall health. The subtle, slightly earthy flavour of a good quality green tea provides the perfect backdrop for kokum’s bright tang. It doesn't overpower the fruit but instead adds depth and a host of its own benefits. The combination creates a beverage that is more than just refreshing—it's a functional drink that cools you down, aids digestion, and gives you a gentle antioxidant boost, all without the processed sugars and artificial flavours found in many commercial drinks.
Your Kokum Green Tea Recipe
Ready to whip up this beautiful, ruby-hued drink? It’s surprisingly simple. This recipe makes two generous servings. **Ingredients:** * 8-10 pieces of dried kokum * 2 cups of hot water, plus 1 cup of cold water * 2 green tea bags (or 2 teaspoons of loose-leaf green tea) * 2-3 tablespoons of jaggery powder or honey, adjusted to taste * A pinch of black salt (kala namak) * A pinch of roasted cumin powder (optional, for a savoury twist) * Ice cubes * Mint leaves and a lemon wedge for garnish **Instructions:** 1. **Soak the Kokum:** In a bowl, soak the dried kokum pieces in 1 cup of hot water for about 30 minutes. This will soften them and help release their flavour and deep colour. After soaking, gently mash the kokum with a spoon to extract as much pulp as possible. 2. **Make the Concentrate:** Strain the liquid into a clean bowl, pressing down on the kokum solids to get every last drop of extract. Discard the solids. This beautiful, dark red liquid is your kokum concentrate. 3. **Brew the Green Tea:** In a separate cup, steep the green tea bags or leaves in 1 cup of hot water for 2-3 minutes. Avoid over-steeping, as it can make the tea bitter. Remove the tea bags or strain the leaves and let the tea cool down completely. 4. **Combine and Flavour:** In a large jug, combine the kokum concentrate and the cooled green tea. Add the remaining 1 cup of cold water. Stir in the jaggery powder or honey until it fully dissolves. Start with less sweetener and add more until you reach your desired taste. Add the pinch of black salt and roasted cumin powder (if using) and stir well.
Serve It Like a Pro
The final step is all about presentation, which transforms it from a simple drink into a true mocktail experience. Fill two tall glasses with a generous amount of ice cubes. Pour the prepared Kokum Green Tea over the ice. The clinking of the ice and the sight of the deep red liquid is instantly satisfying. Garnish each glass with a few fresh mint leaves—gently clap them between your palms before dropping them in to release their essential oils and aroma. Add a thin slice of lemon or lime to the rim of the glass for a professional touch. The bright green of the mint and yellow of the lemon create a stunning contrast against the drink's colour. Serve immediately and enjoy the complex flavours—the tang of kokum, the earthiness of green tea, and the subtle sweetness that ties it all together.
