Sauté onions until golden, then add ginger-garlic paste and your favourite monsoon vegetables—potatoes, cauliflower, and green peas are classic choices. Add powdered spices like turmeric, coriander, and red chilli powder, followed by the soaked rice. After a quick stir, pour in water, seal the pot, and let it cook until the rice is fluffy and has absorbed all the savoury flavours. It’s a celebratory dish that is surprisingly easy to make on a weeknight.
3. Quick Chana Dal Pulao
For a protein-packed meal that is both filling and light, Chana Dal Pulao is an excellent choice. This dish combines the goodness of split chickpeas (chana dal) with fragrant basmati rice in a single pot. The key is to pre-soak the dal to ensure it cooks evenly with the rice. The process starts, as many great Indian dishes do, with tempering whole spices in hot oil. Add onions and garlic, sauté until fragrant, and then stir in the soaked and drained dal and rice. Often called Bisibelabath in its more elaborate form, a simpler South Indian-style dal rice is a comforting, mushy, and flavourful dish perfect for a gloomy day. This dish involves cooking rice, toor dal, and vegetables together with a unique blend of spices, often sambar powder, until they meld into a harmonious whole. In your pressure cooker, heat ghee or oil and temper mustard seeds, cumin seeds, and curry leaves. Sauté onions and tomatoes, then add your choice of vegetables, sambar powder, and turmeric. Add the washed rice and dal, pour in water, and pressure cook for a few whistles. The consistency should be soft and slightly fluid.
